Recipe Description

This Kulfi Special is a traditional Indian frozen dessert made with rich, creamy milk, aromatic cardamom, and crunchy nuts. A delightful treat for any occasion!

Ingredients

  • 1 liter whole milk
  • 1/2 cup condensed milk
  • 1/4 cup sugar (adjust to taste)
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons finely chopped pistachios
  • 2 tablespoons finely chopped almonds
  • 1/4 teaspoon saffron strands soaked in 1 tablespoon warm milk

Instructions

Step 1: Prepare the Milk Base

  • Heat the milk in a heavy-bottomed pan over medium heat, stirring frequently to prevent sticking.
  • Reduce the milk to half its volume by simmering for 20-25 minutes.

Step 2: Sweeten and Flavor

  • Add the condensed milk, sugar, cardamom powder, and soaked saffron to the reduced milk.
  • Stir well and cook for another 5 minutes until the mixture thickens slightly.

Step 3: Add the Nuts

  • Mix in the chopped pistachios and almonds.
  • Allow the mixture to cool to room temperature.

Step 4: Freeze the Kulfi

  • Pour the mixture into kulfi molds or small cups, cover with foil, and insert ice cream sticks.
  • Freeze for 6-8 hours or until fully set.

Step 5: Serve

  • Dip the molds briefly in warm water to loosen the kulfi.
  • Serve immediately and enjoy!
