Instructions

Step 1: Prepare the Thandai Paste

  • Soak almonds, cashews, pistachios, melon seeds, fennel seeds, and poppy seeds in warm water for 20 minutes.
  • Drain the water and blend the soaked ingredients into a smooth paste using a few tablespoons of milk.

Step 2: Flavor the Milk

  • Heat the milk in a saucepan over low heat.
  • Add sugar and stir until it dissolves completely.
  • Mix in the prepared Thandai paste and cardamom powder. Stir well to combine.
  • Add crushed black peppercorns and saffron strands (if using).

Step 3: Chill and Serve

  • Turn off the heat and allow the milk to cool to room temperature.
  • Stir in rose water for a fragrant touch.
  • Refrigerate for 2-3 hours for the flavors to develop.
  • Serve chilled with crushed ice or ice cubes. Garnish with slivers of almonds and pistachios if desired.
