Ingredients
- 200g chicken breast, sliced into thin strips
- 1 aubergine, cubed
- 2 tbsp hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp freshly grated ginger
- 2 garlic cloves, minced
- 150g egg noodles or rice noodles
- 1 spring onion, sliced

Method
- Preheat oven to 200°C (180°C fan). Toss aubergine cubes with hoisin sauce and roast for 20–25 minutes until tender and caramelised.
- Cook the noodles according to the package instructions. Drain and set aside.
- Heat sesame oil in a pan. Add ginger and garlic, sauté for 1 minute, then add chicken. Stir-fry until golden and cooked through.
- Mix in soy sauce and combine with the cooked noodles.
- Top with roasted aubergines, spring onion, and chili. Garnish with coriander and serve hot.
