Daal Green Masala:
Ingredients:
Gram lentil boiled 1 cup
Oil ½ cup
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Green chili paste 2 tbsp
Mint 2 tbsp
Fresh Coriander 2 tbsp
Yogurt ½ cup
Cream ½ cup
Cumin crushed 1 tsp
Crushed coriander 1 tsp
Salt as required
All spice powder ½ tsp
White pepper 1 tsp
Ginger julienne for garnish
Fresh coriander for garnish
METHOD:
Karahi men oil garam ker kay ginger, garlic paste or green chilli paste dal ker bhoon len phir dahi, hari chutney or tamam masalay dal ker masala achi tarhan bhoon len phir daal dal ker mix Karen or cream dal ker itna pakaen kay oil or masala alag alag hojae phir adrak or dhaniya dal ker serve Karen
Gajar Ka Halwa:
Carrot 2 kg
Sugar 2 cups (400 gm)
Milk ½ cup (100ml)
Cardamoms 4 se 5
Clarified butter 1 cup (250gm)
Whole dried milk 750 gm
Pistachios chopped for garnish
Almonds chopped for garnish
METHOD:
Patilay men gajar, sugar or milk dal ker dum per chor den jab gajar gal jae to khoob achay tariqay se bhoon len yahan tak kay halway men se pani khushk hojae. Phir ghee, ilaichi or khoya dal ker bhoon len phir pista or badam dal ker serve Karen.
Kashmiri Dum Aalu:
Potato boiled & fried 6 – 8
Yogurt 2 cups
Kashmiri red chilies 8 -10
Oil ½ cup
Ginger paste 1 tbsp
Turmeric ½ tsp
Red chili powder 1 tbsp
Fennel powder 1 tsp
Cardamom powder ½ tsp
All spice powder 1 tsp
Cinnamon powder ½ tsp
Green coriander chopped for garnish
METHOD
Ubaly huway aaloo ko shallow fry ker len yahan tak kay aloo kay upper golden color ajae.
Ab pan men oil garam ker kay tamam masalay shamil ker den or 1 minute tak pakaen phir dahi or kashmiri mirchen dal ker achi tarhan bhoon len phir fried potato dal ker itna pakaen kay gravy garhi or jae or oil or masala alag alag hojae.
