Aam Ka Paana :

Ingredients

Green mango 1 kg
Sugar 250 gm
Zeera cutter 1 tbsp
Black salt 1 tsp
Black pepper ½ tsp
Vinegar 2 tbsp
Water as required
Method
Carry ko cheel ker thoray say pani kay sath blender men dal ker blend ker len phir pan men dal ker sugar or tamam ajza dal ker itna pakaen kay paste thick hojae phir vinegar dal ker mazeed 1 se 2 minutes tak pakaen. Or thanda ker kay glass men dalen or ice cubes dal ker pani shamil karen phir mix ker kay serve karen.

Mutton paya cholay:

Ingredients

Chick peas boiled 1 cup
Mutton trotters boiled 2 – 3
Oil ¼ cup
Onion slices ½ cup
Ginger & garlic paste 1 tbsp
Salt as required
Black pepper crushed 1 tsp
Zeera cutter 1 tsp
Besan roasted 2 tbsp
Green chili big julienne 2 – 3
Fresh coriander chopped for garnish
Ingredients to temper
Oil ¼ cup
Fenugreek seeds 1tsp
Cumin 1tsp
Garlic chopped 1 tbsp
Red chili whole 6 to 8
Method
Pan men oil garam ker kay onion ko light brown ker len. Phir ginger or garlic paste dal ker bhoon len phir mutton kay paye dal ker achi tarhan fry ker len. Ab boiled chanay dal ker tamam masalay shamil ker len phir mutton or chanay ka stock dal ker itna pakaen kay boil ajay phir ek frying pan men besan dal ker roast ker len or salan men shamil ker kay 2 se 3 minutes tak pakaen.
Ab ek frying pan men oil garam ker kay garlic brown karen phir tarkay kay tamam ajza shamil ker kay salan per tarka laga len. Or hara dhania dal ker serve karen.

Qeema karelay ka salan:

Ingredients

Beef mince 1 cup
Bitter gourd sliced 1 – 2 medium
Oil ¼ cup
Onion slices 1 cup
Garlic paste 1 tbsp
Green chili paste 1 tbsp
Yogurt ¼ cup
Tomato puree ½ cup
Salt as required
Turmeric powder ½ tsp
Red chili powder 1 tbsp
All spice 1 tsp
Cumin crushed 1 tsp
Coriander cutter 1 tsp
Fenugreek dried 1 tsp
Green chili big julienne 2 se 3
Fresh coriander chopped 1 tbsp
Method
Sab se pahlay karelon ko slice cut ker kay beej nikal len or phir namak laga ker 15 minutes kay liye chor den phir pani se wash ker kay side men rakh len.
Ab ek pan men oil garam ker aky onion ko light brown ker len. Phir lehsan or hari mirchon ka paste dal ker sauté ker len phir qeema dal ker achi tarhan fry ker len. Ab tamam masalay dal ker 1 minute tak pakaen phir tomato puree or dahi dal ker itna pakaen kay qeema gal jae phir karelon, julienne kati huee mirchi or qasoori methi dal ker mix karen or 10 minutes kay liye dum per chor den. Phir hara dhania dal ker serve karen.
