Mini chapli kabab:
Ingredients
Beef mince 750grams
Ginger garlic paste ½ tsp
Salt ½ tsp
Chopped red chili 1-1/2 tbsp
Crushed red chili 1 tsp
Chopped coriander 2 tbsp
Chopped white cumin 1 tbsp
Carom seed 1-1/2 tbsp
Pomegranate seed 2 tbsp
Finely cut onions 2
Chopped mint 1/2 bunch
Chopped green chili 7-8
Finely cut tomatoes 2
Eggs 3
Cornflower ¾ cup
Oil for frying
Boiled bones pulp ½ cup
Sliced tomatoes as needed
Method
Marinate the beef with salt and garlic ginger paste for 30mins. Half fry an egg then put 2 eggs cornflower and bones pulp and mix them thoroughly then add tomatoes and cook them on a medium flame. Garnish it with chopped onions and serve it with yogurt and naan.
Peshawari kali mirch boti :
Ingredients:
Margination ingredients:
Boneless chicken ½ kg
Yogurt ½ cup
Roasted crushed cumin 1 tsp
Carom seeds ½ tsp
Dried mango powder 1-1/2 tsp
Crushed black pepper 1-1/2 tsp
Garlic paste 1 tsp
Lemon juice 1 tsp
Red chili powder ½ tsp
For serving:
Wooden Skewers as required
Lemon slices as required
Onion slices as required
Onion cubes as required
Method:
In boneless chicken all masala mix and leave to marinate for 3 to 4 hours. then chicken pieces sewing in skewers with onion cubes then pan fry or barbeque .finally serve with serving ingredients .
Peshawari tikka karahi :
Ingredients:
Chicken tikka 2
Ginger garlic paste 2 tbsp
Salt as required
Tomatoes blended ¾ cup
Crushed black pepper 1 tsp
Crushed red chili powder 1 tsp
Vinegar ½ cup
Crushed cumin 1 tsp
Chopped green coriander, green chili ¾ cup
Clarified butter ¾ cup
Method:
In chicken tikka cut the mark and add salt ,crushed chili ,crushed black pepper ,ginger ,garlic paste ,crushed cumin and vinegar then leave to marinate for 2 to 3 hours .now fry the chicken tikka in clarified butter .then add blended tomatoes and covered it and cook for few minutes till than chicken tender .finally roast then add green coriander and green chili and mix and serve .
