Ingredients:

  • Plain Flour ½ kg
  • Butter 250 gm
  • Eggs 2
  • Sugar 1 tsp
  • Butter 2 tbsp
  • Water as required
  • Salt to taste
  • Sesame Seeds 4 tbsp

Method:

In a bowl, add plain flour, one egg, salt, sugar, 2 tsp butter and water and knead dough. Leave it for 20 minutes. Now, roll the dough like roti .Then adds butter in mid, folds in 4 sides. Roll again and repeat this process 5 to 6 times. Divide the dough in 8 equal parts. Roll the each past like a rope then give shape of robe and roll in swirl. Brush it with beaten egg, sprinkle sesame seeds. Bake it in the oven at 200 degree centigrade for 12-15 minutes.

Stir together the zest and juice, Cointreau, cranberries and mixed fruit in a small bowl and leave to soak. Meanwhile, mix the flour, yeast, caster sugar and nutmeg in a large bowl. Add ½ tsp salt and rub in the butter. Beat the egg with the warm milk, then pour onto the flour mix. Stir with a round-bladed knife, then use your hands to bring the mixture together as a soft dough. Tip onto a work surface and knead for a couple of mins, adding a little flour only if you need to stop it sticking. Oil the bowl, return the dough and cover with cling film. Leave to rise for 45 mins-1 hr in a warm place until doubled in size. Line and butter a large roasting tin with baking parchment. Roll the risen dough out firmly to a long strip about 70 x 18cm. Add the pistachios to the soaked fruit, then scatter the mix along the dough. Roll the marzipan into a sausage the same length as the longest side of the dough, then place it down the centre of the dough and roll up together firmly, a bit like making a sausage roll. Trim the ends, then cut the rest into even lengths and arrange, cut side up, in the tin. Cover with cling film and leave to rise for 45 mins-1 hr until really well risen. Heat oven to 190C/170C fan/gas 5. Bake for 15-20 mins until golden. Will freeze for up to 6 weeks. Brush with melted butter and dredge with icing sugar, or mix a little water into the icing sugar, drizzle over the buns and scatter over the nuts. Eat within 2 days.

To make the coulis, juice the half lemon, then put in a pan with the raspberries and honey. Cook over a gentle heat for a few moments, breaking down with the back of a wooden spoon. Blend to a purée, then push through a sieve and discard the raspberry seeds. Divide between the bottom of four little pots or jars.

To make the quick granola, melt the coconut oil, cinnamon and pinch of salt in a medium pan over a gentle heat. Pour in the oats, seeds and honey and stir well to combine. Continue to move around the pan until evenly browned, about 5 mins. Spread out on a baking sheet to cool.

While it’s cooking, slice up the strawberries and divide between the pots, layering up over the coulis. Spoon 1 tbsp of yogurt on top of each pot. Finish each pot with 1 tbsp of granola sprinkled over (the remaining granola will keep in a jar for a week).

Peel and chop the apples.

In a saucepan, melt the butter and add the cinnamon. Add half of the chopped apples and 50g of the sugar, and cook until tender. Then, add the rest of the apples and cook till they become tender. Taste for sweetness, if the apples are still a bit tart, add the remaining sugar. Chill.

Sieve all the flour and baking powder into a bowl then rub in the butter until your mixture resembles crumbs. Make a well in the middle and pour in the double cream — knead to make a soft dough. Cover with cling wrap and chill for 30 mins.

Place the chilled apple compote in a deep pie dish

Roll out the pie dough and cut into 20-25 strips. Place the strips horizontally and then vertically to make a lattice design on top. Brush with egg white and sprinkle a pinch of sugar. Bake at 170C for 45 mins, until the top is golden and crisp.

Dust icing sugar all over the pie once baked, and drizzle the double cream all over. Serve with a tub of vanilla ice cream on the table, so that everyone can help themselves to it.

One-pan jerk roast chicken

First make the jerk paste. Put all the ingredients in a food processor, add a good pinch of salt and blend to a fine purée, adding a splash of water if the mixture is struggling to break down. Tie the legs together if you like, and put in a large flameproof roasting tin. Pour over the jerk paste and rub all over and inside the chicken. Stuff the cavity with the juiced lime halves and cover the tray with foil. Chill for up to 48 hrs or a minimum of 2 hrs. Heat oven to 200C/180C fan/gas 6. Cook the chicken for 45 mins. Take the chicken out the oven, remove the foil and carefully lift it onto a plate, pouring any juice from the cavity into the tin. Tip the onions, peppers and sweet potatoes into the tin, and season well, then toss in the tray to coat in any residual jerk paste. Put the chicken on top of the veggies and drizzle it with a little oil. Lower the oven to 180C/160C fan/gas 4 and return the roasting tin to the middle shelf, uncovered. Roast for a further 45 mins or until the vegetables are soft and the chicken is cooked through – if you have a meat thermometer, check that the temperature has reached 75C. Carefully remove the chicken from the tin, place on a plate and wrap in foil, then leave to rest. Place the roasting tin on the hob over a medium heat. Stir in the beans and coconut milk, scraping the bottom of the tin to lift off any tasty bits. Simmer until the sauce has thickened a little, then season to taste. If the sauce looks oily, skim the fat off the surface with a spoon. Put the chicken back in the pan and scatter over the coriander leaves before taking to the table. Serve with rice and flatbreads for mopping up the sauce.

All-day breakfast

Heat oven to 220C/200C fan/gas 7. Toss the sausages and oil in a shallow roasting tin, then spread out in an even layer. Drape bacon rashers over the top and roast for 15-20 mins until both are starting to brown and sizzle. Move the bacon and sausages around so everything browns evenly. Scatter over the tomatoes and blob the mustard onto the sausages. Use a pair of tongs or a spoon to create 4 gaps for the eggs, then crack an egg into each gap. Put the tin back in the oven for 5-8 mins or until the egg whites are set and tomatoes softening.
