Ingredients

Easy vanilla cake mix (see recipe below – you won’t need the syrup)
2 x 170g punnets raspberries
225g punnet blueberries
225g tub crème fraîche
icing sugar (optional)

Direction

Butter and line the base and sides of a round, loosebottomed 23cm cake tin with non-stick baking paper. Make the Easy vanilla cake batter (see ‘Goes well with’), spread half of it into the tin, then mix half the berries into what is left. Spoon this over the first layer and smooth the top. Bake for 1 hr 30 mins; check with a skewer – it should come out clean. Cool for 30 mins, then remove from the tin and leave to cool on a wire rack. Once completely cold, put onto a plate, smooth the crème fraîche over and pile the remaining berries on the top. Dust with icing sugar, if using. The cake is best eaten fresh, but will keep in the fridge for up to 2 days; return to room temperature before topping with the cream and fruit and serving.

Place garbanzo beans in a large bowl. Pour enough water over the beans to cover by several inches. Soak 8 hours to overnight. Rinse and drain the garbanzo beans thoroughly. Combine garbanzo beans, 3 cups water tomatoes, 1 finely chopped onion, jalapeno pepper, vegetable oil, salt, turmeric, ground red chile pepper, and dried whole chiles in a large pot over medium high heat and bring it to a boil.

Salt beef with beetroot & horseradish relish

Put the beef in a pan that is big enough to fit it and all the vegetables. Cover it with water and bring to the boil, skimming off the froth that comes to the surface. Tip the onion and parsley into the pot and simmer gently for 1 hr, skimming as necessary. Add the carrots and simmer for 30 mins. Finally, add the leeks and simmer for 30 mins longer. The meat is ready when it feels tender when prodded with a fork. While the meat cooks, mix the beetroot and horseradish with the sugar and vinegar until the sugar has dissolved. remove the beef and place it on a board. Scoop out the carrots and leeks into a serving dish. Slice the beef at the table and serve with the vegetables and beetroot relish – but warn everyone that a little goes a long way! You can also offer some cooking liquid to drizzle over if anyone wants it.

Chicken curry with lime leaf, lemongrass & mango

Blend the chopped lime leaves with the rest of the curry paste ingredients in a food processor. Heat the oil in a large saucepan, add the curry paste and cook on a medium heat for 2-3 mins. Pour in the coconut milk and bring to a simmer. Add the chicken, lime zest and juice, then season and cover. Gently simmer for 30 mins until the chicken is tender. Remove the lid and cook for a further 10 mins. Add the green beans, mangoes and whole lime leaves and cook for 5 mins. Add the coriander leaves just before serving with hot jasmine rice.

Chicken & broccoli pasta bake

Preheat the oven to 190C/gas 5/fan170C. Bring a large pan of salted water to the boil. Throw in the pasta, stir well and return to the boil. Cook for 6 minutes, then add the broccoli and cook for 5-6 minutes more until the pasta is just cooked. Drain well, then return to the pan. Heat the oil in a wide pan, add the chicken pieces and fry until lightly browned. Tip in the mushrooms and stir fry for 1 minute, then stir in the tomato paste, cheese and cream. Gently simmer, stirring, until the cheese has melted to thicken the sauce. Season with salt and pepper. Pour the sauce over the pasta, stirring gently until coated, then tip into a shallow ovenproof dish (about 1.7 litre capacity) and level the top. Mix the spring onions, cheddar, garlic and almonds for the topping and sprinkle over the pasta. Bake for 20 minutes until golden.

Lightly score the duck skin all over and rub with the five-spice and some salt, making sure you get into the cut marks (this can be done a day ahead and left to marinate in the fridge uncovered). Light a lidded barbecue. Let the flames die down and the coals turn ashen, then mound the coal up on one side. If you’re using a small barbecue, you will have to remove the grills and put a sturdy roasting tin on the floor of the barbecue, next to the coals – this will give you space to close the lid once the duck is in. If you have a large barbecue, the duck will sit in a tray directly on the grills, or simply heat oven to 180C/160C fan/gas 4.

Open the can of cider, reserve a few tbsps for the sauce, and pour about half into a glass (you can drink this as a pre-dinner tipple!) Feed the ginger and garlic into the can and pour in the oil and half the soy. Push the duck onto the can, legs down, so that it’s sitting upright with the can in its cavity. Stand it upright on the tray in the barbecue or oven, close the lid and cook for 1 hr.

While the duck is cooking, whisk the remaining soy, honey and chilli sauce together with the reserved cider. Brush the sauce all over the duck and cook for another hour, basting every 10-15 mins with all the sticky juices in the pan until the duck is dark and glossy. Remove from the barbecue or oven and rest for 30 mins. Meanwhile, mix the Sichuan pepper with some flaky sea salt. Carefully lift the duck off the tray and the can. Season with the spiced salt and add the coriander to the cavity. Carve and serve.

Warm duck salad with Merlot dressing

Heat oven to 190C/170C fan/gas 5. Prick the skin of the duck with a fork, rub with salt and black pepper, then place in a roasting tin and roast for 50 mins until the skin is golden and crisp. Meanwhile, boil the potatoes for 10 mins until almost tender, drain, peel, then cut into cubes. Add to the tin with the duck, toss in the fat that has come from the skin, then roast for the final 30 mins of the duck’s cooking time or until golden. Make the dressing. Put the wine and shallot in a pan, then boil to reduce by half. Add the redcurrant jelly and stock, then stir until melted. Stir in the olive oil. Boil the beans for 7-8 mins, drain, then peel away the thick skin to reveal the bright green inside. Arrange the chicory and watercress in large shallow bowls with the beetroot and beans. Shred the duck and pile onto the salad with the potatoes. Drizzle with the dressing.

Bring a pan of water to the boil, add the potatoes and celery and cook for 8 mins. Meanwhile, mix the yogurt, cucumber, caraway and mustard in a bowl. When the potatoes and celery are cooked, drain and set aside for a few mins to cool a little.

Bash the pork pieces with a rolling pin to flatten them. Sprinkle over the sage and some pepper, then top each with a slice of Parma ham. Heat the oil in a non-stick pan, add the pork and cook for a couple of mins each side, turning carefully. Add the balsamic vinegar and let it sizzle in the pan.

Stir the potatoes and celery into the dressing and serve with the pork, with some salad leaves on the side.
