Olive Pan Fish Recipe in Urdu

Ingredients

  • 300 gm fish fillet
  • 1/2 cup green olives
  • 1 egg lightly beaten
  • 1 lemon juice
  • 4 tbsp olive oil
  • 3 tbsp plain flour
  • 2 tbsp cornflour
  • 1 tbsp garlic paste
  • 1 tbsp red chili crushed
  • 1/4 tsp cardamom powder
  • salt to taste

Cooking Method

  1. Rinse fish fillets and remove all excess fat then drain.
  2. Now cut fish fillets in 3 to 4 inch pieces.
  3. In a bowl, add flour, corn flour, egg, black pepper and salt.
  4. Mix well and make a smooth batter.
  5. Put fish fillets in this batter and leave it for 20 minutes.
  6. Place chopped olives in a shallow dish.
  7. Coat marinated fish with olives.
  8. Heat oil in a pan, fry for 10 minutes or until tender.
  9. Delicious Olive Pan Fish is ready to serve.

Duchess potatoes

Cook the potatoes in a pan of boiling salted water for 15 mins until really tender when pressed into the side of the pan. Drain well and leave to steam dry in the pan for 2 mins. Mash the potatoes until lump free, a ricer is good if you have one, or press through a metal sieve to ensure it’s completely lump free once you’ve used a potato masher.

Mix the egg yolk, butter and cheese in a large bowl, then add the mash and mix well with a spatula, with some salt and pepper and a grating of nutmeg, until the butter has melted and is well incorporated. It will come away from the sides of the bowl, similar to choux pastry.

Heat the oven to 220C/200C fan/gas 7. Spoon the mash into a piping bag with a wide star nozzle. Line a baking sheet with baking parchment and grease with a little veg oil. Pipe 20 walnut-sized peaked mounds onto the prepared tray like you were icing a cupcake. Beat the egg white with a pinch of salt and brush the potato mounds gently, to keep the fluting.

Bake the potatoes for 15-20 mins until golden brown and crisp.

Roasted butternut, turmeric & coconut curry

Heat the oven to 220C/200C/gas 7. Whisk the oil and curry powder together in a large bowl. Add the butternut squash and toss to coat in the oil. Spread out the squash on a baking tray, then roast in the middle of the oven for 20-25 mins until tender.

Meanwhile, put the coconut milk, chickpeas, honey and the turmeric & root ginger paste in a saucepan. Bring to the boil, then lower to a medium heat and cook until reduced to the consistency of single cream. 

Divide the curry between two bowls, scatter over the roasted butternut squash and finish with a squeeze of lime juice and some coriander. Serve with naan bread, if you like.

Spinach kedgeree with spiced salmon

Heat the oil in a large frying pan and fry the onion and ginger for 5 mins or until soft. Add the cumin, cinnamon, crushed cardamom seeds, and 1 tsp each of the turmeric and coriander. Cook for 30 secs until fragrant. Add the chilli, garlic, pepper and rice, stir briefly, then pour in the stock. Cover and simmer for 35 mins or until the rice is tender and the stock has been absorbed. If the rice is cooked but some liquid remains, remove the lid and simmer uncovered to allow the liquid to evaporate. Add the spinach, cover and cook for 3 mins to wilt. Meanwhile, prepare the salmon. Heat the grill to medium and line a baking sheet with foil. Mix the yogurt with the mint or coriander and the remaining turmeric and ground coriander. Spread the yogurt mixture over the salmon, then transfer to the prepared baking sheet and grill for 8-10 mins until the fish can be flaked easily with a fork. Top the kedgeree with the salmon fillets or flake the fish into it, and scatter over the almonds to serve.
