Ingredients

  • Under cut beef ½ kg
  • Garlic 6 cloves
  • Ginger 1 inch piece
  • Green chilli 15 (chopped)
  • Salt 1 ½ tsp
  • Onion 1 small (chopped)
  • White cumin 1 tsp
  • Black cardamom 2
  • Black pepper whole 12
  • Cloves 6
  • Cinnamon 2 sticks
  • chilli powder 1 tsp
  • Oil 3 tbsp
  • Ingredients for Mustard Sauce:
  • Plain flour 2 tbsp
  • Salt 1 tsp
  • Chilli powder 1 tsp
  • Mustard paste 1 tsp
  • Vinegar 3 tbsp
  • Oil 2 tbsp
  • Sugar ½ tsp
  • Water 1 cup
  • To serve burger:
  • Burger buns 4
  • Salad leaves 4
  • Cucumber slices 4
  • Tomato slices 4

Cooking Directions

  1. To Make Beef Burger: Cut undercut beef into small fillets
  2. In a pan boil the beef, with 2 cups of water, cloves of garlic,ginger, salt, onions , cumin, cardamoms, whole black pepper, cloves and sticks of cinnamon, till the meat is tender.
  3. Let it cool, discard all the spices and shred the beef.
  4. Heat oil on a flat pan, add chilli powder and ¼ tsp salt .
  5. Add the shredded beef and fry for 3 minutes.
  6. Remove from stove and cool, hunter beef is ready.
  7. Method for sauce: In a sauce pan heat oil.
  8. Add plain flour,salt,chilli powder,mustard paste, oil, vinegar, sugar and water.
  9. Mix all the ingredients together in sauce pan and cook stirring constantly until a thick consistency is formed.
  10. To serve burger: Grill the burger buns on a flat pan with ¼ cup ghee.
  11. Remove the buns and lay them on a plate.
  12. Spread mustard sauce onto half a bun.
  13. Then put salad leaves and shredded meat.
  14. Top with a slice of cucumber and a slice of tomato.
  15. Cover with the other half of the bun and serve.

To make the pastry, sift the flour into a bowl with a pinch of salt, sugar and ground ginger. Rub in the butter until you have a breadcrumb consistency, then add 30-50ml of cold water, stirring with a flat-bladed knife until the crumbs form a dough. Knead the pastry briefly until smooth, then wrap in cling film and refrigerate for 30 mins.

Heat oven to 200C/180C fan/gas 6. Line a baking tray with baking parchment. Arrange the rhubarb in the tray in a neat layer, scatter over 250g of the sugar and scrape out the vanilla pod over it. Add the orange juice and zest and cover tightly with foil. Bake for 20-30 mins, until the rhubarb is soft. Remove from the oven and cool. Strain off the syrup using a sieve – you’ll need this later for the meringue.

Roll out the pastry on a floured surface. Line a 20cm tart tin, leaving an overhang. Pop into the fridge to chill for 30 mins. Once chilled, cover the case with baking parchment, fill with baking beans and blind bake for 25 mins, until golden. Remove the baking beans and bake for 5 mins more to crisp up the bottom. Allow to cool, then remove from the tin to a plate.

For the custard, combine the remaining sugar with the egg yolks and whisk vigorously, until really pale and frothy. Gently heat the cream and milk in a pan until it’s almost boiling. Remove from the heat and briefly allow to cool before pouring a little of the cream mix onto the egg yolks and stirring to combine. Pour the egg yolk mix back into the pan and heat gently, stirring with a wooden spoon. Cook until the mixture coats the back of a spoon (about 5 mins). Remove from the heat and pour into a jug or mixing bowl.

Divide the rhubarb in half, reserving the pinkest, prettiest lengths. Blitz the other half to a purée in a food processor and add to the custard. Fill the tart and top with the rhubarb. Chill until needed.

To make the Italian meringue, measure out 160g of the rhubarb poaching syrup and bring to the boil. You need to it be about 118C (this will cook the egg whites to set the meringue). In the bowl of a stand mixer, whisk the egg whites until they form soft peaks. Add the cream of tartar and mix. When the syrup has reached 118C on a cooking thermometer, carefully pour it down the sides of the stand mixer and whisk until you have a smooth, fluffy meringue. Fill a piping bag with a medium star nozzle and pipe little meringue kisses over the tart. Use a blowtorch to gently scorch the meringue and serve straight away.

Heat oven to 180C/160C fan/gas 4. Rub the chicken thighs with 2 tbsp of the chipotle paste. Put the rest in a medium bowl with the garlic, tomatoes, onion and some seasoning. Stir to combine, then tip into a large roasting tin. Sit the chicken thighs close together on top of the sauce. Cover with foil and bake for 1 hr. Remove the roasting tin from the oven, add all the beans and stir into the tomato mixture around the chicken. Put back in the oven, uncovered, for 20 mins or until the chicken is tender and the beans are hot. Meanwhile, mix the herbs, lettuce and cucumber with a drizzle of olive oil and set aside. Shred the chicken using a knife and fork, and discard the bones. Mix the chicken through the sauce and beans. Serve with the salad, tortilla chips and lime wedges.

Air fryer chicken thighs

Combine the paprika in a bowl with the herbs and garlic granules, if using, together with ½ tsp salt and ½ tsp ground black pepper. Scatter onto a plate. Rub the chicken thighs with the oil, then coat in the spice mix. Put in the basket of your air fryer and cook, skin-side down, for 10 mins. Turn over and cook for a further 10-15 mins until cooked through and the skin is crispy. To check they are cooked, pierce the thickest part of the thigh with a knife to see if the juices run clear. Remove from the air fryer immediately to stop the skin from softening.

Faggots with onion gravy

Heat oven to 160C/140C fan/gas 3. Lightly oil a very large roasting tin. Tip the stuffing mix into a large bowl, add 500ml boiling water, stir and set aside.

Pulse the pork in a food processor until finely chopped. Add the liver and pulse again. Add to the stuffing with the mace, 1 tsp salt and plenty of black pepper. Stir well. Shape the mixture (it will be very soft) into 24 large faggots and put in the prepared tin.

To make the gravy, fry the onions in the oil until starting to turn golden. Add the sugar and continue cooking, stirring frequently, until caramelised. Tip in the vinegar and allow to sizzle. Mix the flour with a couple of tbsp water. Pour the stock into the onions, then add the flour paste and cook, stirring constantly, until smooth and starting to thicken. When it is thick, pour into the tin with the faggots, cover with foil and bake for 1 hr until cooked through. Serve sprinkled with parsley, with mash and a veg, if you like.

Tip the flour and cinnamon into a bowl, then break in the whole eggs, pour in the milk and whisk together until smooth. Stir in the banana. In a separate bowl, whisk the egg whites until light and fluffy, but not completely stiff, then fold into the pancake mix until evenly incorporated.

Heat a small amount of oil in a large non-stick frying pan, then add a quarter of the pancake mix, swirl to cover the base of the pan and cook until set and golden. Carefully turn the pancake over with a palette knife and cook the other side. Transfer to a plate, then carry on with the rest of the batter until you have four.

To make the compote, tip the berries in a non-stick pan and heat gently until the berries just burst but hold their shape. Serve two warm pancakes with half the berries, then scatter with the mint leaves and sprinkle with a little cinnamon. Chill the remaining pancakes and compote and serve the next day. You can reheat them in the microwave or in a pan.
