Ingredients

  • Chicken Boneless (cube cutting) 300g
  • double steam premium Rice 300g
  • Salt as per taste Red
  • Chili Crushed ½ tsp
  • Black Pepper, Crushed ½ tsp
  • Sugar ½ tsp
  • Cooking Oil 1 ½ tbsp
  • Ginger & Garlic Paste 1 tbsp
  • Capsicum 2 pieces
  • Onion 1 piece
  • Tomato 1 piece
  • Tomato Paste 1 tsp
  • Chili Garlic Sauce 1tsp
  • Tomato Ketchup 1 tbsp
  • Soy Sauce 1 tbsp
  • Carrots 1 piece
  • Cabbage 10 g

Direction: In a pot, add and marinate chicken, egg, salt, green chili, black pepper, sugar. Now keep in the refrigerator for 30 minutes. In cooking pot, add cooking oil, ginger & garlic paste, marinated chicken and cook for 2-3 minutes. Now add, salt, tomato ketchup, soy sauce, tomato paste, chili sauce and mix it. Afterward, add capsicum, onion, tomato and cook for 2-3 minutes and add chicken stock, and corn flour mixed with water. Now cook for 2-3 minutes. Egg Fried Rice Cooking Direction: In a cooking pot add, cooking oil, egg, capsicum, cabbage, carrots, boiled double steam premium rice, salt, black pepper, soy sauce, green onion and cook for a while. Your tasty Chicken Shashlik with Egg Fried Rice is ready to serve.

Hot wings

Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.

Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.

Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.

Heat oven to 200C/180C fan/gas 6. Wet your hands, push a piece of mozzarella into the centre of each meatball, then re-form the meat into a ball. Place on a baking tray and cook for 15-20 mins until they’re browned and cooked through. Meanwhile, tip the sauce into a pan. Gently heat, letting it bubble and reduce a little. Once the meatballs are cooked, pop a mini skewer in each one and serve with the sauce to dip.

Heat oven to 190C/170C fan/gas 5. Line a muffin tin with cases. Heat the oil in a pan and cook the onion until soft.

Quarter the beef tomato, scoop out the seeds and core, then discard and very finely chop the tomato and olives, if using. Crumble the feta into really small crumbs. Set everything aside.

Set a sieve over a large mixing bowl. Measure out the flours, polenta, bicarb and baking powder along with 1 tsp salt, decanting directly into the sieve as you go. Use the back of a spoon to press everything through the sieve – there will be some wholemeal flour left over in the sieve at the end – just tip this back into the mixing bowl.

Beat the egg in a separate bowl. Measure out the sunflower oil and milk and stir into the egg. Make a well in the flour mixture, tip in the egg mix and stir it together. Fold in the onion, tomato, feta, oregano and olives, if using. Mix well. Spoon the mixture between the muffin cases. Grate over a little cheese and bake for 25 mins. Eat warm or leave to cool and pack in a picnic.

Preheat oven to 200C/180C fan/gas 6. Mix the tamarind paste with the lime, sugar, salt, chilli powder, turmeric, garlic and ginger. Add enough water – you won’t need much – to make sufficient marinade to coat the four pieces of fish. Turn the salmon over in the marinade, making sure it gets well coated, cover and put in the fridge for 1 hr (or 30 mins is fine if you’re in a rush). Heat the oil in a large frying pan and add the chillies. Fry over a medium heat for 30-40 secs, then add the salmon fillets. Brown the fillets on each side (including the skin), then transfer them to a roasting tin. Spoon some of the chilli oil from the pan over them. Bake in the oven for 12 mins, or until the fish is cooked right through to the centre (check with the tip of a knife). Serve with rice, lime wedges and an Indian chutney.
