  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 tablespoon lemon juice
  • 1 egg, beaten
  • Salt to taste
  • Oil for frying
  • 1 tablespoon curry leaves (optional)
  • 1 teaspoon mustard seeds (optional)

Instructions

Step 1: Marinate the Chicken

  • In a large bowl, combine the chicken with ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt.
  • Let the chicken marinate for at least 15 minutes for the flavors to meld.

Step 2: Prepare the Coating

  • In a separate bowl, mix rice flour and all-purpose flour.
  • Dip the marinated chicken pieces into the flour mixture, ensuring an even coating on each piece.
  • Beat the egg and dip the coated chicken into the egg, followed by another layer of the flour mixture.

Step 3: Fry the Chicken

  • Heat oil in a deep frying pan over medium-high heat.
  • Once the oil is hot, fry the chicken pieces in batches until golden brown and crispy, about 5-6 minutes per batch.
  • Remove from oil and drain on a paper towel.

Step 4: Garnish and Serve

  • If desired, heat some oil in a small pan, add mustard seeds and curry leaves, and sauté briefly.
  • Pour this over the fried chicken for added flavor and garnish.
