This Cheesy Bonfire Bread is a perfect companion for cool evenings by the fire. Packed with rich cheese, herbs, and a hint of smoky flavor, it’s a pull-apart treat that’s as fun to make as it is to eat!

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 cup warm water
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella, shredded
  • 1 tbsp olive oil
  • 1/4 cup melted butter
  • 1 tbsp fresh rosemary, chopped
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix yeast, warm water, and sugar. Let it sit for 10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, kneading until a smooth dough forms.
  3. Cover the bowl with a damp cloth and let it rise for 1 hour or until doubled in size.
  4. Preheat oven to 200°C (400°F).
  5. Punch down the dough and transfer it to a floured surface. Roll it out into a rectangular shape.
  6. Brush with melted butter, then sprinkle cheese, rosemary, smoked paprika, salt, and pepper evenly.
  7. Roll up the dough and cut into slices, placing them into a baking dish with edges touching.
  8. Bake for 25-30 minutes or until golden brown and cheese is melted.
  9. Serve warm and enjoy around the bonfire!

Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl. Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl. When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don’t overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
