A quick and simple prawns recipe for an instant weekend lunch.
PRAWNS PEPPER FRY
Ingredients
20-25 prawns, cleaned and deveined
4-5 tsps coarsely crushed black peppercorns
2 tbsps oil
1 large onion, sliced
1 tsp finely chopped ginger
2 tsps finely chopped garlic
12-14 curry leaves
½ tsp turmeric powder
1 tsp red chilli powder
1½ tbsps Tata Sampann Coriander Powder
Salt to taste
2 tbsps freshly chopped coriander leaves
4 tsps tamarind pulp
3 tbsps scraped fresh coconut
Method
1. Heat oil in a non-stick shallow pan, add onion, ginger, garlic and curry leaves. Sauté on high heat for 2-3 minutes.
2. Add turmeric powder, red chilli powder and Tata Sampann Coriander Powder, mix well.
3. Add prawns and salt. Toss well and add coarsely crushed black peppercorns. Add 1 tbsp chopped coriander and mix well. Cook for 3-4 minutes.
4. Add tamarind pulp and coconut. Mix well and cook for 3-4 minutes. Take it off the heat and transfer to a serving bowl.
5. Serve hot.
