  • 2 large eggs

Filling and Topping

  • 1 cup heavy cream, whipped
  • 2 cups cherries, pitted and halved (or canned cherries, drained)
  • 2 tbsp cherry liqueur (optional)
  • 1/4 cup powdered sugar
  • 1/2 cup chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together milk, melted butter, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined. Stir in the hot water until smooth. The batter will be thin.
  5. Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. Once cooled, slice each cake horizontally to create four thin layers. If using cherry liqueur, brush each layer lightly for added flavor.
  8. Place the first cake layer on a serving plate, spread a layer of whipped cream, and scatter cherries on top. Repeat this process for each layer, finishing with a layer of whipped cream on top.
  9. Decorate with chocolate shavings and additional cherries if desired. Chill in the refrigerator for at least 30 minutes before serving.
