Instructions

Step 1: Brown the Beef

In a large pot, heat the olive oil over medium heat. Add the beef cubes and sear them on all sides until browned. Remove the beef and set it aside.

In the same pot, add the chopped onions, minced garlic, and sliced carrots. Sauté for about 5 minutes until the vegetables begin to soften.

Step 3: Add Tomato Paste and Herbs

Stir in the tomato paste, dried thyme, and rosemary. Cook for another 2 minutes, allowing the flavors to meld together.

Step 4: Add Broth and Beef

Return the browned beef to the pot. Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 1 hour.

Step 5: Add Potatoes and Peas

After 1 hour, add the cubed potatoes and peas. Continue simmering for an additional 30 minutes or until the potatoes are tender and the stew has thickened.

Step 6: Thicken the Stew

In a small bowl, mix the flour with a little water to make a slurry. Stir this mixture into the stew to thicken the broth. Cook for another 5-10 minutes.

Step 7: Serve
