Hiya! Today we will discuss about Beef Chili Dry

Ingredients:

Beef undercut 1/2 kg
Green chilies 3-4
Talhar chilies 1-2
Chili garlic sauce 2 tbsp
Soya sauce 3 tbsp
Crushed black pepper 1/2 tsp
Garlic paste 1 tbsp
Chicken stock 2 cups
Corn flour 1 to 1-1/2 tbsp
Green onion 1-2
Oil 2-3 tbsp
Salt to taste

Method:

Cut undercut into slices.
Now heat oil in pan, put garlic paste and undercut slices and roast on high flame for 2-3 minutes.
Then cut green chilies into slices, add in meat and roast for 1-2 minutes on high flame.
Now add soya sauce, chili garlic sauce, salt and black pepper and cook on high flame.
When mixture dries, add stock and cook it.
When boils comes, dissolve corn flour in water, add it and cook until gravy is thick.
Then fry talhar chilies in oil, add it, mix it and take out in dish.
Then garnish with green onion and serve.

Easy Indian chicken with coleslaw

Heat oven to 200C/fan 180C/gas 6. Mix the coriander stems with the cumin, lime zest, juice and oil. Make 3 slashes in each chicken quarter, then sprinkle over the turmeric and half the lime mixture. Season well, then leave to marinate for 10 mins or up to 24 hrs. Roast on a baking tray for 50 mins until golden and cooked through. Tip the cabbage and carrots into a bowl, then pour over the remaining dressing. Add the coriander leaves and toss together. Serve alongside the chicken with some naan bread or rice, if you like.

Fresh peaches with lemon balm & bay syrup

Prepare two days in advance: dissolve the sugar in a pan with 300ml/1?2 pint water over a low heat. Put the lemon balm and bay leaves in a bowl. Pour in the hot syrup and lime juice, cover and leave in a cool place for at least 2 days. Several hours ahead, have ready a bowl of iced water. Plunge the peaches one at a time into a saucepan of boiling water. Remove from the pan immediately and put in iced water. Peel the peaches, then cut them in half and remove the stones. Put the halves in a bowl and strain the syrup over. Cover and chill for about 2 hours, basting from time to time. To serve, spoon a peach and some syrup into each dessert glass and serve with clotted cream and Balmoral biscuits on the side.

Roast spiced duck with plums

Heat oven to 160C/140C fan/gas 4. Toast the star anise and coriander seeds in a dry pan until aromatic. Tip the toasted spices into a spice grinder with 2 tsp sea salt and grind into a fine powder (or crush using a pestle and mortar). Put the spice salt in a bowl, add the sugar, mix well and set aside.

Lightly score the skin of the duck in a criss-cross pattern and heat the oil in a large casserole. Using a pair of tongs to turn it, brown the duck well on all sides, pour off the excess fat, then sit the duck breast-side up and season all over with the sugar and spice mix. Pack the plums around the outside, then scatter over the bay and pour over the vinegar and stock.

Roast in the oven for 2 hrs or until the duck is golden and the plums have broken down. Turn the oven right up for 10 more mins to crisp up the skin. Take the duck out of the pan to rest for 10 mins and spoon the excess fat off the plums. Carve the duck and serve with a good spoonful of plums.
