Crab and Lobster Stuffed Mushrooms

Ingredients

  • 1 (6 ounce) can crab meat, drained
  • 1/2 kg lobster tail, cleaned and chopped
  • 3 tbsp minced garlic
  • 1/4 cup shredded mozzarella cheese (optional)
  • 3/4 cup melted butter, divided
  • 1/2 fresh mushrooms, stems removed
  • 1 cup crushed seasoned croutons
  • 1 cup shredded mozzarella cheese

Directions

Preheat the oven to 375 degrees F (190 degrees C). Brush a large baking sheet with about 1/4 cup of melted butter. Arrange mushroom caps in a single layer over the baking sheet. Mix together the crushed croutons, remaining 1/2 cup butter, shredded cheese, crab meat, lobster and garlic in a medium bowl. Spoon into mushroom caps where the stems used to be. Bake for 10 to 12 min in the preheated oven, or until lightly browned on the top. Sprinkle with additional cheese if desired, and serve hot!

Trim any silvery sinew from the pork, then slice the meat into thin medallions. Mix the cornflour with 2 tbsp of the soy, add the pork and toss to coat. Set aside for 5 mins. Stir together the rest of the soy, the vinegar, sugar, rice wine and 2 tbsp water. Let the sugar dissolve.

Heat 1 tsp oil in a wok or frying pan. Fry the peanuts for 1-2 mins, stirring often, until toasted and golden, then set aside in a dish. Add 1 tbsp oil to the pan, and stir-fry the pork for 3-4 mins until golden but not completely cooked through. Set aside.

Wipe out the pan if needed, then add another 1 tbsp oil and stir-fry the sprouts over a high heat for 5 mins, adding 1 tbsp water at the end to provide a shot of steam. They should be bright green and just tender, but not soft. If the pan seems dry, add another 1 tsp oil, then tip in the ginger, garlic and chilli. Sizzle for 1 min, then add the sauce, pork and any resting juices. Simmer for a few mins until the sauce thickens and the pork is cooked through. Scatter with the nuts, drizzle over the sesame oil and serve with rice.

Melt the butter in a pan until foaming, then stir in the flour to make a paste. Cook for 2 mins. Remove from the heat and gradually whisk in the milk. Add the bay leaf, return to the heat, and bring to a simmer. Cook for 4-5 mins, whisking continuously until thickened. Remove from the heat and whisk in 50g parmesan, the mustard and cayenne pepper. Season to taste.

Put the spinach in a large pan with 50ml boiling water, cover and leave for 2-3 mins to wilt. Drain and leave to cool. Put the spinach in a clean tea towel and squeeze out any excess water. Transfer to a food processor and pulse to roughly chop, then add the ricotta and pulse again to combine. Grate in some nutmeg, then season.

Heat the oven to 200C/180C fan/gas 6. Remove the bay leaf from the sauce, then spoon a third into the bottom of a 24 x 28cm baking dish. Top with a third of the ricotta and spinach mixture, a third of the ham, then 4 lasagne sheets (overlap them slightly if needed). Repeat with the remaining ingredients, finishing with a layer of sauce. Top with the remaining parmesan and the mozzarella. Bake for 45-50 mins or until golden, covering halfway through if it’s starting to brown.

Cook the edamame in a small pan of boiling water for 2-3 mins. Drain, then rinse under cold running water and drain again.

Combine the lime zest and juice, the peanut butter, soy sauce, honey and some seasoning in a large bowl to make a dressing, adding a splash of water if needed to loosen. Add the edamame, shredded cabbage, sliced pepper and shredded turkey to the bowl and toss everything together until well-coated.

Tip the salad onto a platter, then scatter with the coriander and clementine slices. Gently mix these into the salad with salad servers, being careful not to break the fruit up too much. Scatter over the peanuts just before serving.

Mexican bean chilli

Fry the onion and red pepper in olive oil over a medium heat for 10-15 mins or until softened. Increase the heat, add the chilli powder and cook for a few minutes before adding the mince. Cook until browned and all the liquid has evaporated. Tip in the baked beans, beef stock and chipotle paste. Simmer over a low heat for 15-20 mins. Season, scatter with coriander leaves and serve with rice and yogurt.

Steam-fried bao buns (Sheng jian bao)

In a large bowl, mix the flour, sugar, yeast and 1/ 4 tsp salt with 180ml lukewarm water. Knead the mixture for 10 mins or until elastic. Put in a lightly oiled bowl, cover with a damp tea towel and leave in a warm place to prove until it has doubled in size, about 1 1/ 2 hrs.

Meanwhile, in a small bowl, mix the seasoning ingredients and 1/ 4 tsp salt. In a separate small bowl, mix the cornflour with 2 tbsp cold water and set aside.

In a wok over a medium heat, fry the ginger with 1 tbsp rapeseed oil for 30 secs. Add the mushrooms and the seasoning mixture and stir-fry for 1 min. Pour the cornflour paste into the wok and stir-fry for 1 min more, or until the sauce thickens.

Add the Chinese cabbage and fry briefly, then remove the wok from the heat. Add the noodles, tofu, spring onions, sweetcorn and sesame oil. Gently fold everything together so that the filling is evenly mixed, then leave to cool.

Punch the air out of the dough and divide into 20 small balls about the size of a golf ball, each weighing roughly 25g. Put them in a roasting tin and re-cover with the tea towel. Leave in a warm place to prove for a further 20 mins.

Flatten the dough balls with your hands. Use the tip of a rolling pin to roll around the edge of the dough ball a few times to flatten it, then gently work around the edges using your fingertips. The aim is to achieve a round sheet of dough with a thicker bump in the middle on which you can place the filling. Repeat until all of the balls have been rolled. Cover them again with the damp tea towel as you go so they don’t dry out.

Taking a dough sheet in the palm of your hand, put 2 tsp of the filling in the middle. Cup your palm so the filling remains in the middle, then gently gather up the edges into the middle and twist to seal. Continue until all the buns are filled. Put them back in the roasting tin and re-cover with the tea towel again

Add 1 tbsp rapeseed oil to a frying pan over a medium heat. Arrange half the buns in the pan, leaving 1/ 2 cm between them so they have enough room to rise during cooking. Fry for 1-2 mins, sprinkling with a little water, then pour 100ml water into the pan and cover with a tight-fitting lid.

Cook for 2-3 mins until all the water has evaporated and the buns have doubled in size. They should become very white and the bottom should be crispy and golden brown. Repeat the process with the remaining 1 tbsp oil and the rest of the buns. Mix the sriracha and oyster sauce together in a small dish and serve with the buns.
