CHICKEN PAD THAI

Ingredients

100 grams boneless chicken, cut into thin strips
4-5 broccoli florets, blanched
6-8 mushrooms, thickly sliced
1 medium red capsicum, seeded, cut into juliennes
1 medium green capsicum, seeded, cut into juliennes
Salt to taste
1½ tablespoons oil
5-6 garlic cloves, chopped
5-6 spring onions, chopped
5-6 garlic cloves, chopped
200 grams flat noodles, boiled
2 tablespoons brown sugar
1 teaspoon soy sauce
2 fresh red chillies, diagonally sliced
5-6 stalks spring onion greens, chopped + for garnishing
2 tablespoons roasted peanuts, coarsely ground + for garnishing
1 tablespoon lemon juice
½ cup bean sprouts + for garnishing

Method

1. Heat oil in a non-stick pan. Add garlic and spring onions, and cook until the garlic is golden brown.
2. Add chicken and mix well. Add mushrooms, mix and cook for a minute. Add broccoli, green capsicum, red capsicum, salt and mix well.
3. Add noodles, brown sugar, soy sauce and toss. Add red chillies, spring onion greens, peanuts and toss. Add lemon juice and mix well.
4. Serve hot in a bowl. Garnish it with bean sprouts, peanuts and spring onion greens.
