Recipe Description

This decadent cake is inspired by the flavors of a hazelnut latte. The moist cake is infused with hazelnut flavor, and the coffee buttercream frosting adds a rich, coffee flavor.

Ingredients

For the Cake:**

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup hazelnut extract
  • 1/2 cup finely ground hazelnuts

For the Coffee Buttercream Frosting:**

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons instant coffee powder, dissolved in 2 tablespoons hot water
  • 1/4 cup finely ground hazelnuts

Instructions

Make the Cake:**

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract and hazelnut extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  7. Stir in the ground hazelnuts.
  8. Pour the batter into the prepared pan.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Make the Coffee Buttercream Frosting:

  1. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Beat in the vanilla extract and dissolved coffee.
  3. Fold in the ground hazelnuts.

Assemble the Cake:

  1. Once the cake is completely cool, frost the top and sides with the coffee buttercream frosting.
  2. Decorate with additional ground hazelnuts, if desired.

Tips

  • For a stronger hazelnut flavor, add more hazelnut extract or chopped hazelnuts to the batter.
  • You can adjust the strength of the coffee flavor by adding more or less instant coffee powder.
  • To make the cake extra special, you can add a layer of hazelnut spread between the layers of cake.
