Instructions

Step 1: Prepare the Chocolate Mousse

  • In a heatproof bowl, melt the chopped chocolate over a double boiler or in the microwave. Let it cool slightly.
  • In a saucepan, heat 1/2 cup of heavy cream until just simmering. Slowly whisk the warm cream into the melted chocolate until smooth.
  • In a separate bowl, whisk eggs and sugar until light and frothy. Gradually fold this mixture into the chocolate mixture, followed by the vanilla extract.
  • Whip the remaining heavy cream to stiff peaks and gently fold it into the chocolate mixture. Set aside.

  • If using fresh cherries, cook them with sugar and cherry syrup in a small saucepan for 5 minutes, until slightly softened. Let cool.
  • For canned cherries, drain and mix them with cherry syrup. Set aside.

Step 3: Assemble the Dessert

  • Spoon a layer of chocolate mousse into serving glasses or bowls.
  • Add a layer of cherries on top, followed by another layer of mousse.
  • Refrigerate for at least 2 hours to set.

Step 4: Garnish and Serve

  • Before serving, top each glass with whipped cream, chocolate shavings, and a fresh cherry.
