Tarbooz ka Thanda:
Ingredients
Water melon 1 cup
Lemon slices 2 – 3
Mint leave 2 – 3
Ice cubes 4 – 5
Black salt pinch
Water ¼ cup
Water melon cubes for garnish
Method
Tarbooz ko blender men dal ker blend ker len. Phir juice ko chan ker alag ker len
Ab glass men ice cubes, lemon slices, mint leaf, black salt, water melon cubes or tarbooz ka juice dal ker mix ker kay serve ker len.
Lehsan aur mirch ka achar:
Ingredients
Garlic cloves 1 cup
Green chili big 10 to 12
Mustard oil ½ cup
Onion seeds 1 tbsp
Fennel crushed 1 tbsp
Cumin crushed 1 tsp
Coriander crushed 1 tbsp
Mustard seeds 1 tsp
Salt 1 tsp
Red chili powder 1 tsp
Turmeric powder ½ tsp
Method
Mirchon ko darmiyan se cut laga len phir lemon or mirchon ko namak or haldi laga ker 24 ghanton kay liye chor den. Is tarhan mirchon men se sara pani nikal jae ga phir phir mirchon or lehsan ko achi tarhan chan len.
Phir ek pan men sarson kay oil ko khoob achi tarhan garam ker kay thanda ker len.
Ab grinder men kalonji, rai, zeera, dhania or sonf dal ker grind ker len.
Ab ek jar men mirchen or lemon dal ker masala shamil karen or phir oil dal ker achar ko 2 se 3 din kay liye dhoop men rakh den or phir istemal karen
Bagharay rice:
Ingredients
Rice 500gm
Oil ¼ cup
Onion slices 1 large
Ginger & garlic paste 1 tbsp
Green chili paste 1 khanay ka chamcha
Salt hasbe zarurat
Zeera 1 tbsp
Cinnamon sticks 2 to 3
Cloves 5 se 6
Method
Pan men oil garam ker kay onion ko golden fry ker len ..phir lehsan, adrak ka paste or green chili ka paste ker ker fry ker len.. phir dar chini, long, zeera or namak dal ker 1 se 2 minutes tak bhoon len. Phir pani dal ker ubal anay den ..jab ubal ajae to chawal dal ker itna pakaen kay pani kam reh jae.. phir chawal ko dum per chor den.
Arhar daal tarka:
Ingredients
Split red gram 250 gm
Ginger & garlic paste 1 tbsp
Green chili 1 big
Turmeric powder ½ tsp
Red chili powder 1 tbsp
Salt as required
All spice 1 tsp
Tamarind ½ cup
Raw mango (sliced) 1
Ingredients to temper
Oil ¼ cup
Garlic chopped 1 tbsp
Cumin 1 tsp
Curry leaves 8 to 10
Method
Daal men namak , mirchen, lesan ka paste, haldi or pani dal ker paknay rakh den. Phir jab dal gal jae to daal pees ker imli ka pulp or karry dal ker mazeed itna pakaen kay karry gal jae.
Ab frying pan oil garam ker kay lehsan ko fry karen zeera or curry patta dal ker daal per tarka laga len.
