Instructions

  1. Make the Base: In a mixing bowl, combine almond flour, rolled oats, maple syrup, melted coconut oil, and salt. Mix until well combined.
  2. Press the mixture evenly into the bottom of an 8×8 inch baking pan lined with parchment paper. Bake at 350°F (175°C) for 10-12 minutes until lightly golden. Let cool.
  3. Prepare the Caramel: In a food processor, blend the pitted dates, almond butter, coconut milk, and vanilla extract until smooth and creamy.
  4. Spread the caramel layer over the cooled base and place it in the freezer for 30 minutes to set.
  5. Make the Chocolate Topping: Melt the dark chocolate chips and coconut oil in a microwave or double boiler. Stir until smooth.
  6. Pour the melted chocolate over the caramel layer and spread evenly. Return to the freezer for another hour to set.
  7. Serve: Once set, remove from the pan, cut into bars, and enjoy!

Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl. Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl. When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don’t overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
