Recipe Description

This Spiced Honey Drizzle Cake is a moist and aromatic treat, perfect for tea time or a cozy dessert. Infused with warm spices and topped with a delightful honey drizzle, it’s an easy cake to bake but delivers rich, complex flavors.

Ingredients

  • 150g butter, softened
  • 125g brown sugar
  • 100g honey (plus extra for drizzling)
  • 3 large eggs
  • 200g self-raising flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1 tbsp milk

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a loaf tin with parchment paper.
  2. Cream the butter and brown sugar together until light and fluffy. Add the honey and beat well.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, sift together the flour, cinnamon, ginger, nutmeg, and salt.
  5. Gradually fold the dry ingredients into the wet mixture, alternating with the milk.
  6. Pour the batter into the prepared loaf tin and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick comes out clean.
  8. While the cake is still warm, drizzle extra honey on top for added sweetness and shine.

Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl. Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl. When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don’t overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
