  • 8 large eggs, room temperature

  • 2 cups whole milk
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 6 cups powdered sugar (for frosting)
  • 1/4 cup heavy cream (for frosting)
  • 1 tablespoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line three 9-inch round cake pans with parchment paper.
  2. In a bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Alternately add the flour mixture and milk to the batter, beginning and ending with the flour mixture. Mix until just combined.
  5. Divide the batter evenly among the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  7. For the frosting, beat the butter until creamy. Gradually add the powdered sugar, followed by the heavy cream and vanilla extract. Beat until smooth and fluffy.
  8. Place the first cake layer on a serving plate, spread a layer of frosting on top, then repeat with the remaining layers. Frost the top and sides of the cake for a smooth finish.
