Ingredients

  • Chicken breast 2 flattened
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Paprika ½ tsp
  • Garlic ½ tsp
  • Peri peri sauce 2 tbsp
  • Lemon juice 1 tbsp
  • Burger buns 2
  • Tomato 1 (sliced)
  • Salad leaves as required
  • Cucumber half (sliced)
  • Mayonnaise 3 tbsp
  • Oil ¼ cup

Method:

Marinate chicken with salt, pepper, paprika, garlic, peri peri sauce and lemon juice for 30 minutes. Preheat grilling pan, fry steak on medium heat until done.Cut burger buns, heat and spread with sauce.Put salad leaves on buns, tomato slices, cucumber slice, chicken breast and top with mayonnaise.Cover with bun and serve with fries.

Chicory, sausage & black olive polenta tart

Put the orange juice and honey in a large frying pan and bubble until reduced to a sticky glaze. Add the chicory and cook for 2 mins, turning once in the glaze until it just starts to soften, then leave in the pan to cool. Once cooled, cut each piece of chicory in half again. Heat the oven to 200C/180C fan/gas 6 and boil the kettle. Line a large baking sheet with parchment and oil it lightly.

Crumble the stock cube into a large pan and add 1 litre hot water from the kettle. Bring the water back to the boil, then quickly pour in the polenta and cook for 5 mins, whisking the whole time. It will be really thick once cooked. Tip the polenta onto the baking sheet and spread out to make the tart base – it should be about 2-3cm thick.

Top with the cheese, arrange the chicory pieces on top in a fan, then crumble small chunks of sausage around them, discarding the skins. Add the olives, chilli, orange zest, a good drizzle of olive oil and some seasoning. Bake for 20 mins, then turn the grill on for a final few mins until the sausages are browned and the polenta is starting to crisp. Leave to stand for a few mins, then serve warm.

Spring chicken pot pie

Season the chicken thighs with some salt and pepper. Heat the oil in a heavy-based saucepan and fry the chicken for 3-4 mins on each side until lightly golden, then transfer to a plate. Add the bacon to the pan and fry for 5 mins until golden. Tip in the leeks and fry for another 5 mins.

Sprinkle the flour over the leeks and bacon, and stir until combined. Add the wine, if using, and bubble for a few minutes, then add the stock and stir well. Slice the chicken and return it to the pan – don’t worry if it’s not fully cooked through at this point, it will finish cooking in the oven.

Stir in the crème fraîche, peas, 1 tbsp mustard and the tarragon, and bubble for a few minutes until thick and saucy. Add a splash more stock or water if it seems too thick Remove the pie filling from the heat. Whisk the remaining ½ tbsp mustard with the egg in a bowl.

Heat the oven to 200C/180C fan/gas 6. Spoon the filling into a pie dish with a lip and use some of the egg mix to brush the sides of the dish. Unroll the pastry over the top of the pie and crimp the edges against the sides of the dish, then cut away any excess with a knife. Will keep frozen, well covered, for up to three months.

Brush the remaining egg glaze over the pie and make a small steam hole in the middle. Bake for 40 mins until golden and puffed. Serve with buttered new potatoes and steamed greens or carrots, if you like.

Tomato & chorizo risotto

Heat the olive oil in a saucepan and sizzle the chorizo for 1 min until some of the oil starts to come out. Add the onion and cook for 5 mins until soft, then add the risotto rice and cook for 1 min. Splash in the vinegar, then add the tomatoes and stir well. Gradually add the hot stock, a ladleful at a time – stir the rice until the stock is absorbed, then add the next ladleful. With the last ladleful of stock, add the peas and keep stirring until the rice is cooked. Turn off the heat and stir through the Parmesan and parsley, if using. Serve straight from the pan, with extra Parmesan, if you like.

Pancetta chicken wraps

Arrange a quarter of the pancetta slices in a row on a board, overlapping them slightly along their long sides. Put a chicken breast at one end so that it lies across the slices of pancetta, top with 3 sage leaves and sprinkle with a little sea salt and freshly ground black pepper. Wrap the chicken in the pancetta so that it is completely enclosed. Repeat to make 4 parcels altogether. Spoon the oil into a large heavy pan (a cast-iron sauté pan is ideal, or you could use a roasting tin). Put the pan on the barbecue and heat for 1–2 mins until hot, then lay the chicken parcels in the pan and cook for 7–8 mins on each side. The pancetta will become golden and crispy. Remove the parcels, lay the tomatoes in the pan and shake to coat in the cooking juices, then heat through for a couple of minutes. Return the chicken to the pan, take the pan off the heat and leave the chicken to rest in it for about 10 mins, so it will cut more easily.
