  2. In a frying pan, heat olive oil and sauté onion, pepper, and courgette for 4–5 minutes until soft. Let cool slightly.
  3. In a large bowl, whisk eggs with milk, salt, pepper, and optional herbs.
  4. Stir in sautéed vegetables and cheese.
  5. Pour the mixture into the baking dish and spread evenly.
  6. Bake for 20–25 minutes until golden and set in the middle.
  7. Cool slightly, then slice into wedges and serve.
