Ingredients:

Chicken 1 cup
Milk 1 cup
Coconut 200 gm
Cumin seeds 2 tsp
Raw tomatoes 2
Garlic cloves 6
Ginger 1
Lemon juice 1/2 cup
Salt 1 tsp
Garam masala powder 2 tsp
Fennel seeds 2 tsp
Turmeric 1 tsp
Yogurt 1 cup
Oil 1/2 cup
Curry leaves 8

Method:

Put milk, coconut, green chilies, tomatoes, garlic, ginger, lemon juice, salt, fennel seeds and yogurt in blender, blend it and make paste.
Now heat oil and put cumin seeds, fennel seeds and curry leaves.
When aroma comes, put grinded masala and roast on low flame.
When oil comes up, add 1 cup water.
When it boils, put chicken and cook for 30 minutes.
Then close stove, put garam masala powder.
Milky chicken is ready.

Crunchy granola with berries & cherries

Preheat the oven to 190C/Gas 5/fan oven 170C. Halve some of the pecans, leave some whole. Mix with peanuts, oats, sesame seeds, sunflower seeds and a pinch of salt in a large bowl. In a jug, measure the oil and pour into the mixture, then measure the honey – it will slide out easily. Stir together with a fork to break up any big clumps of oats. Pour on to a large baking tray with sides, preferably non-stick, in a thin layer. Bake for 20-25 minutes, stirring well at least twice and bringing the mixture in from the edges, until it is golden. Transfer to a large bowl and leave to cool. Mix in the berries and cherries and serve with plenty of chilled milk. Store for up to 1 month in airtight container.

Slow-braised pork shoulder with cider & parsnips

Heat oven to 180C/160C fan/gas 4. Heat the oil in a large lidded flameproof casserole and brown the meat in batches, then set aside. Fry the onions, celery and parsnips with the bay leaves for 10 mins until golden brown. Sprinkle in the flour and give a good stir, then add the pork and any juices back to the dish. Add the cider and stock so that the meat and vegetables are covered. Season and bring to a simmer, then cover and put in the oven for 2 hrs. Serve sprinkled with parsley, with mashed potato and greens, if you like.

Superhealthy Singapore noodles

Pour boiling water over the noodles and leave to soften. Meanwhile, heat half the oil in a large non-stick wok and stir-fry all the vegetables, except the beansprouts and onions, with the garlic, chilli and ginger until softened. If the broccoli won’t soften, add a splash of water to the wok and cover to create some steam. Tip the veg on to a plate, add the rest of the oil to the wok then briefly stir-fry the chicken and prawns until just cooked. Set aside with the vegetables and add the curry paste to the pan. Stir-fry for a few secs then add 150ml water and the soy sauce. Allow to bubble then add the drained, softened noodles and beansprouts, and toss together to coat. Return the vegetables, chicken and prawns to the wok with the coriander and spring onions. Toss well over the heat and serve with lime wedges.

Toast the hazelnuts in a dry, non-stick pan until golden. Leave to cool a little, then roughly chop or crush using a pestle and mortar. Whisk the mustard with the vinegar and sherry, then slowly pour in the oil, whisking all the time. Season and set aside. Boil the carrots for 3-4 mins or until just tender, drain and tip back into the pan. Pour over the dressing, stir to coat, cook over a low heat for 1-2 mins, then tip into a serving dish. Scatter over the hazelnuts and serve.
