Nutritional Ingredients

  • Whole Turkey: 4-5kg
  • Butter: 150g, softened
  • Garlic: 4 cloves, minced
  • Fresh Rosemary: 2 tbsp, chopped
  • Fresh Thyme: 2 tbsp, chopped
  • Fresh Sage: 1 tbsp, chopped
  • Salt & Pepper: To taste
  • Lemon: 1, halved
  • Onion: 1, quartered
  • Chicken Stock: 500ml

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Pat the turkey dry with paper towels.
  3. In a bowl, mix butter, garlic, rosemary, thyme, sage, salt, and pepper.
  4. Gently loosen the turkey skin and rub the herb butter underneath and over the skin.
  5. Stuff the turkey cavity with lemon halves and onion quarters.
  6. Place the turkey on a rack in a roasting pan and pour the chicken stock into the pan.
  7. Roast for about 3 hours, basting occasionally with pan juices.
  8. Check the internal temperature; it should reach 75°C (165°F) in the thickest part.
  9. Remove from oven and let rest for 20 minutes before carving.
