Recipe Description

A classic British treat, Coconut Nice is a simple and delicious dessert. It’s made with just a few ingredients and is perfect for any occasion.

Ingredients

  • 1 cup desiccated coconut
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 egg white
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the coconut, sugar, melted butter, egg white, and vanilla extract.
  4. Mix well until the mixture is combined and slightly sticky.
  5. Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them apart.
  6. Bake for 15-20 minutes, or until golden brown.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Tips

  • For a richer flavor, use unsalted butter.
  • To make the coconut nice more festive, add some food coloring to the mixture.
