  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup hot brewed coffee

  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until combined. Gradually stir in the hot coffee until the batter is smooth.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. For the filling, whip the heavy cream in a mixing bowl until soft peaks form. In another bowl, mix the mascarpone cheese, powdered sugar, vanilla extract, and coffee liqueur until smooth.
  7. Gently fold the whipped cream into the mascarpone mixture until well combined.
  8. Once the cakes are cooled, slice each cake in half horizontally to create four layers. Place one layer on a serving plate and soak it with coffee or coffee liqueur.
  9. Spread a layer of the mascarpone filling over the soaked cake, then add the next layer. Repeat until all layers are stacked.
  10. Frost the top and sides of the cake with the remaining mascarpone filling. Chill in the refrigerator for at least 4 hours before serving.
  11. Before serving, dust the top with cocoa powder and garnish with chocolate shavings, if desired.
