Ingredients

Instructions
Step 1: Marinate the Meat
- In a large bowl, mix the chicken or mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, lemon juice, and salt.
- Let it marinate for at least 30 minutes or overnight for better flavor.
Step 2: Prepare the Rice
- Rinse the basmati rice and soak it for 20 minutes.
- In a large pot, bring water to a boil and add cloves, cardamom pods, bay leaf, and salt.
- Add the soaked rice and cook until 70% done. Drain and set aside.
Step 3: Cook the Meat
- In a large pot, heat oil or ghee. Add the marinated meat and cook until tender (about 20-30 minutes for chicken, 40-50 minutes for mutton).
- Add fried potatoes and half of the fried onions. Mix well.

- In the same pot with the cooked meat, add a layer of partially cooked rice.
- Sprinkle with fried onions, mint leaves, coriander, and saffron milk.
- Repeat the layers until all ingredients are used up.
Step 5: Dum Cooking
- Cover the pot tightly and cook on low heat for 20-25 minutes to let the flavors meld.
- Let it rest for 10 minutes before serving.
