Recipe Description

Basundi is a rich and creamy traditional Indian dessert made by simmering milk until thickened and sweetened with sugar. Flavored with cardamom, saffron, and topped with chopped nuts, this delightful sweet treat is perfect for festivals, special occasions, or as a comforting dessert.

Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (soaked in 2 tablespoons warm milk)
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped pistachios
  • 1 tablespoon chopped cashews
  • 2 tablespoons chironji seeds (optional)

Instructions

Step 1: Boil the Milk

  • In a heavy-bottomed pan, bring the milk to a boil over medium heat.
  • Stir frequently to prevent the milk from burning or sticking to the bottom.

Step 2: Thicken the Milk

  • Lower the heat and let the milk simmer.
  • Keep stirring and scraping the sides of the pan to mix the thickened milk back in.
  • Continue until the milk reduces to about half its original volume.

Step 3: Add Flavor

  • Add the saffron milk and cardamom powder, and mix well.
  • Add the sugar and stir until completely dissolved.

Step 4: Add Nuts

  • Add the chopped almonds, pistachios, cashews, and chironji seeds.
  • Simmer for another 5 minutes.

Step 5: Chill and Serve

  • Remove from heat and let the Basundi cool to room temperature.
  • Refrigerate for at least 2 hours before serving for a chilled dessert.
  • Garnish with more chopped nuts before serving.
