Potato and Peas Salad
Baby potatoes and green peas – what a luscious and pleasant treat to the palate! A mild, pleasantly-flavored dill sauce transforms a simple salad of peas and potatoes into an exotic delicacy. While the focus is on the dill, the lemon juice plays a very important role in the dressing, providing a welcome tang to the Potato and Peas Salad, making it a perfect summer fare!
Preparation Time: 15 minutes. Cooking Time: Nil. Serves 4.
For the dressing
2 tbsp finely chopped dill leaves (shepu / suva bhaji)
½ cup whisked curds (dahi)
1 tsp lemon juice
¼ cup fresh cream
Salt and freshly ground black pepper (kalimirch) to taste
Other ingredients
1½ cups boiled and peeled baby potatoes
1 cup boiled green peas
For the garnish
1 tbsp chopped dill leaves (shepu / suva bhaji)
For the dressing
1. Combine all the ingredients in a deep bowl and mix well.
2. Refrigerate for ½ hour. Keep aside.
How to proceed
1. Combine the potatoes, green peas and dressing in a deep bowl and toss well.
2. Serve chilled.
