Methi Chuqandar Gosht:
Ingredients:
Beef meat boiled ½ kg
Boiled beet root 750 gm
Fenugreek ¾ cup
Onion chopped 1
Tomatoes 250 gm
Ginger garlic ground 2 tbsp
Cumin powder 1 tsp
Crushed red chilies 1 tsp
Salt, chilies, turmeric to taste
Bay leaf 1
All spice powder 1 tsp
Green coriander ½ bunch
Oil ¾ cup
Green chilies for garnish
Method:
Heat oil then add onion and fry well. Add ginger garlic paste, tomatoes, salt, chili, turmeric, crushed red chilies and bay leaf and cook all this very well. Then add boiled meat and cumin powder and again cook well. Add boiled beet root, fenugreek and all spice cook well. Lastly, Garnish with green coriander and green chilies then serve it with boiled rice.
Sabziyon ka yakhni pulao:
Ingredients for stock:
Fennel seeds 1 tbsp
White cumin 1 tsp
Onion chopped 1
Ginger chopped 1 tbsp
Garlic chopped 1 tbsp
Clarified butter 1 tbsp
Tomatoes 2
Mix whole spice 1 tbsp
Salt as required
Boiled peas ¾ cup
Boiled carrot ½ cup
Potatoes 1-1/2 cup
Beans ½ cup
White pepper ½ tsp
Green chilies ½ tsp
Salt as required
Chopped onion 1
Ginger garlic paste 1 tbsp
Oil ¾ cup
Yogurt ½ cup
Rice 3 cup
Boiled eggs 2-3
Nutmeg, mace ½ tsp
Method:
For stock, heat clarified butter and add onion, garlic, ginger and tomatoes sauté well. Add whole spice, fennel, cumin, salt with 4 glass of water. When stock is ready sieve it. Heat oil and fry onion. Add ginger garlic paste, salt, white pepper, green chilies, nutmeg mace powder, vegetables and yogurt and cook well. Cook till the boil comes. Add rice with water, cook till the vegetables are tender. Leave it for simmer. Garnish with boiled eggs and serve.
