Khabsa Rice:

Rice 500 gm
Chicken with bone 500 gm
Onion chopped 1 cup
Garlic chopped 2 tbsp
Oil ½ cup
Taiz patta 2 se 3
Choti ilaichi 4 se 5
Dar chini 3 se 4
Dry lemon 2 se 3
Salt as required
Red chili powder 1 tbsp
White pepper 1 tsp
Tomato paste ½ cup
Tomato puree 1 cup
Water as required
Mehtod
Pan men oil garam ker kay onion ko sauté ker len phir garlic dal ker chicken shamil karen or achi tarhan fry ker len. Ab tamam masalay, tomato puree, tomato paste or pani dal ker 15 se 20 minutes tak dhakan laga ker chicken ko pakaen. Phir rice dal ker thori dair pakaen phir dum per chor den. Phir serving thaal men rice rakh ker shish tawook, lebanese kabab, madbi, grilled vegetable or tomato sauce kay sath serve karen.

Sheesh tawook:

Chicken boneless cubes ½ kg
Oil 1tbsp
Garlic paste 1tbsp
Yogurt as required
Lemon juice 2tbsp
Salt 1tsp
Black pepper 1tsp
Cumin powder 1tsp
Cream (optional) as required

Method
Shish tawook kay liye ek mixing bowl men chicken or tamam ajza dal ker 1 ghanay kay liye fridge men rakh len. Phir chicken ko wooden skewer men laga ker bbq ker len ya grill pan men cook ker len. Is men ko dahi istemal hoga us ko ek din pehlay mal mal kay kapray men dal ker latka den takay us ka sara pani nikal jae.

Zafrani Sivayyan:

Vermicelli 1 cup
Clarified butter ¼ cup
Cardamom 4 to 6
Sugar 1 cup
Milk ½ cup
Whole dried milk ½ cup
Saffron essence few drops
Almonds as required
Raisins 1 tbsp
Dried dates 5 to 6
Method
Pan men ghee garam kery kay ilaichi ko sauté ker len phir sivayyan dal ker fry ker len ab zafran essence, sugar, milk, khoya, badam, kishmish or chuwaray dal ker itna pakaen kay sivayyan dry kojae phir serving platter men nikal ke badam or kishmish dal ker serve karen.

Duggus sauce :

Ingredients

Tomato chopped 1 cup
Capsicum ¼
Onion ¼
Garlic 3 to 4 cloves
Green chili big chopped 1 large
Coriander chopped 1 tsp
Lemon juice 2 tbsp
Salt as required
Red chili crushed 1 tsp
Zeera cutter ½ tsp
Pani ¼ cup
Method
Tamam ajza ko blender men dal ker 30 seconds kay liye blend ker len.
