GRILLED FISH WITH PEPPER SALSA

Ingredients

4 salmon fillets
2 lemons, cut in half
Salt to taste
Crushed black peppercorns to taste
4 tbsps extra virgin olive oil
1 medium green capsicum, finely chopped
1 medium red capsicum, finely chopped
1 medium yellow capsicum, finely chopped
1 medium tomato, finely chopped
2 green chillies, finely chopped
4 tbsps freshly chopped coriander leaves
Lemon slices for garnish
Coriander sprig for garnish

Method

1. Take salmon fillets on a plate, squeeze 1 lemon and sprinkle salt and crushed black peppercorns. Drizzle 2 tbsps oil and rub well. Set aside.
2. In a bowl, add green capsicum, red capsicum, yellow capsicum and tomato. Mix well.
3. Add green chilli, salt, squeeze remaining lemon and add chopped coriander. Mix well and set aside.
4. Heat remaining oil in a non-stick grill pan, place the salmon and grill on both sides till completely cooked. Take it off the heat.
5. Transfer ona serving plate, garnish with lemon slice and coriander sprig. Serve hot with prepared salsa.
