Refreshing flavour of coconut in a kulfi. Perfect to beat the heat.
COCONUT KULFI
Ingredients
6 tbsps coconut milk powder
1 cup tender coconut flesh
2 tsps grated fresh coconut
1 litre milk
4 tbsps grated khoya
1 cup sugar
Method
1. Heat milk in a deep non-stick pan. Add coconut milk powder, mix well and let it reduce.
2. Add khoya, mix well and cook till it thickens.
3. Place coconut flesh in a grinder jar and grind finely.
4. Add ground coconut flesh to the pan and mix well. Add grated coconut and mix well.
5. Add sugar, mix well and cook till the sugar melts. Switch off heat and cool to room temperature.
6. Pour into aluminium kulfi moulds, cover with the lid and freeze till set.
7. Serve.
