Chicken and potato doughnuts:
Ingredients
Chicken Boiled / shredded 1 cup
Boiled potatoes ½ kg
Cheddar cheese 1 cup
Black pepper 1 tsp
Salt 1 tsp
Rice flour ½ cup
Bread crumbs as required
Crushed red pepper 1 tsp
Mustard paste 1 tsp
Coriander leaves 2 tbsp
Chopped onion 2 tbsp
Green chilies chopped 2
Chili garlic sauce 1 tbsp
Baking powder ½ tsp
Oil as required
Eggs 2
Method
Mix boiled potatoes, shredded chicken with all the ingredients except eggs and bread crumbs. Also mix in this the egg yolks. After you’ve mixed them well, shape this batter into doughnuts. Now dip in egg whites, coat in bread crumbs, fry and serve with ketchup.
Lucknowi daal:
Ingredients
Gram lentil 1 cup
Pigeon lentil 1 cup
Turmeric ½ tsp
Salt 1 tsp
Asafetida pinch
Cumin seeds 2 tsp
Crushed red pepper 2 tsp
Curry leaves 10-12
Chopped garlic paste 1 tbsp
Butter 2 ounce
Clarified butter ½ cup
Coriander leaves 2 tbsp
Fennel seeds grinded 1 tsp
Cashew nuts grinded into a paste 1 tbsp
Method
Boil together both the lentils until tender, cool and blend, heat ghee, add in cumin seeds and curry leaves, add ¼ cup water with grinded saunf, cashew nut paste, crushed garlic, crushed red pepper, salt and turmeric, fry well, add in both the grinded daals, cook for 10 mins, remove in a dish, top with coriander leaves and butter, serve with boiled rice.
Mutton galawati:
Ingredients
Mutton ½ kg
Tomato chopped 4
Raw papaya 1 tbsp
Chili powder 2 tsp
Turmeric ½ tsp
Salt 1 tsp
Roasted & crushed cumin 1tsp
Green chilies 6 cut
Coriander leaves 4 tbsp
Allspice ½ tsp
Ginger garlic 1 tbsp heaped
Oil ½ cup
Lemon juice 2 tbsp
Method
Marinate mutton with raw papaya, salt, lemon juice, add in 1 ½ cup water, cover and cook till mutton tender, heat oil, add sliced tomatoes with green chili julienne, add in boiled mutton with salt, chili powder, zeera, haldi and allspice, ginger garlic paste, fry well till all done, lastly add chopped coriander leaves, leave it on dum for 5 mins, serve with roti.
