Bhindi aalu gosht:
Ingredients
Bhindi 250 gm top and tail removed and deep fried
Potato 1 diced and deep fried
Oil ½ cup
Chili powder 2 ½ tsp
Turmeric ¼ tsp
Dhania 2 tsp
Yogurt ½ cup
Onion 1 grinded
Allspice ½ tsp
Tomatoes 2 chopperized
Coriander leaves chopped 2 tbsp
Green chilies 3 chopped
Whole mix spices 1 tsp
Mutton ½ kg boiled with ginger garlic 1 tbsp, salt 1 tsp and 2 cups water
Method
Heat oil, add whole spices and grinded onion, fry well, add all the dry spices with boiled mutton, fried potatoes, tomatoes, fry well, add yogurt, fry well, add 1 cup water, cover and cook till potatoes and mutton tender, add fried bhindi, cover and simmer till all done and oil comes on top. Lastly add chopped greens and allspice. Serve with roti or paratha.
Blueberry angel delight:
Ingredients
Plain cake ½ pound
Blueberry pie filling 1 can
Egg pudding mix 1 packet
Milk 1 ¼ cup
Whipped cream 1 cup
Blueberry essence few drops
Method
Cut cake into small cubes, put cubes of cake in shot glasses, moist with any juice. In a sauce pan combine egg pudding mix, milk, cook until thick, remove, cool mixture, fold in whipped cream, pour over cake in shot glasses, refrigerate for 1 hour, top with blueberry pie filling, serve garnished with whipped cream.
Special Karachi fried fish:
Ingredients
Boneless fish fingers ½ kg
Vinegar 1 tbsp
Ginger garlic 1 tsp
Salt 1 tsp
Method
Marinate fish with vinegar, ginger garlic, salt for 30 mins, wash and dry.
Ingredients for 2nd marination
Ginger garlic paste 1 tsp
Crushed coriander 2 tsp
Ajwain crushed ½ tsp
Zeera crushed 1 tsp
Crushed red pepper 2tsp
Salt ½ tsp
Black salt ½ tsp
Chicken powder 1 tsp
Egg 1
Corn flour ½ cup
Method
Marinate fish for 30 mins with vinegar, ginger garlic and salt, rinse well, dry, add in it all the ingredients for second marination, egg and corn flour, mix well and deep fry, serve with tartar sauce and imli ki chatni.
Ingredients for tartar sauce
Mayonnaise ½ cup
Pickled cucumber finely chopped 1 tbsp
Salt pinch
Lemon juice 1 tbsp
Method
Mix all together.
Ingredients for imli ki chatni
Tamarind pulp 1 cup
Crushed red pepper 1 tsp
Cumin crushed 1 tsp
Salt ¼ tsp
Method
Cook all together till thick.
