Chiang mai noodles
Ingredients
Noodles ½ packet
Chicken fries chopped 1packet
Spring onion diced diagonally 1 cup
Onion chopped 1 cup
Oil ¼ cup
Garlic crushed 1 tbsp
Red chili crushed 1tsp
Red curry paste 2 tbsp
Carrot thinly sliced 1
Fish sauce 2 tbsp
Coriander leaves chopped 2 tbsp
Sweet chili sauce 2 tbsp
Capsicum sliced 1
Method
Soak noodles for 15 mins, drain and keep aside, heat oil in a wok, add onion, chopped garlic, red chilies and curry paste, fry for 2 mins, add chicken with ¼ cup water, cook until tender, add vegetables and noodles, lastly add chopped greens, serve immediately with sweet chili sauce.
Chana palak rice:
Ingredients
Spinach chopped with chilies 2 cups
Rice soaked ½ kg
Onion chopped 1 cup
Oil ¼ cup
Mixed whole spices 1tbsp
Fresh grated coconut 3tbsp
Ginger garlic paste 1tsp
Chickpeas boiled 1cup
Salt 1 ½ tsp
All spice powder 1 tsp
Water 2 ½ cups
Method
• Chop spinach and green chilies.
• Heat oil in a pan. Fry onions till the colour changes to light brown.
• Add whole mixed spices with ginger garlic paste.
• Add the spinach paste you prepared earlier to the pan and fry it.
• Add the remaining soaked rice and water.
• Cover and let it simmer on medium flame for 10 mins. Lower the flame, leave it on dum until rice are ready to be served.
Methi prawns:
Ingredients
Prawns cleaned ½ kg
Oil ½ cup
Chopped onion 1 cup
Ginger garlic 1 tsp heaped
Turmeric ¼ tsp
Chili powder 1 tsp
Coconut milk ½ cup
Coriander powder 1 tsp
Cumin crushed 1 tsp
Sambal oleak 1 tbsp
Fenugreek chopped 2 bunches
Tomatoes ground 2
Allspice ½ tsp
Coriander leaves 2 tbsp
Green chilies chopped 2
Method
Heat oil add choti methi leaves, fry for 1 min, add onion, fry till light golden, add in all the spices with tomatoes, fry well, add prawns, cook uncovered for 10 mins, add coconut milk, cook till oil comes on top and thick masala left, add chopped greens and allspice.
