Rajgira is one ingredient that is used in every fasting meal because of the fact that it isn’t a cereal but functions like one – it provides easy to digest proteins hence making perfect food during a fast. Here is a sweet vrat-approved Rajgira Chikki recipe which is perfect to provide you enough energy to fast through the day and still play a round of garba at night!
RAJGIRA CHIKKI
Ingredients
1½ tbsps coconut oil
1 cup chopped jaggery
A pinch of senda namak
1 cup puffed rajgira
A pinch of green cardamom powder
¼ cup slivered mixed nuts
Method
1. Heat coconut oil in a non-stick pan, add jaggery and senda namak and mix till the jaggery melts.
2. Add puffed rajgira and green cardamom powder and mixed nuts and mix till well combined. Take the pan off the heat.
3. Transfer the mixture into a greased burfi tray and spread it evenly. Keep aside for 5-10 minutes. Cut into squares and set aside to cool completely.
4. Demould and serve as required or store in an air tight container.
