BADAMI PANEER MASALA

Ingredients

250 grams cottage cheese (paneer), cut into 1 inch cubes
¼ cup almonds (badam), blanched, peeled and ground into a fine paste
2 tbsps oil
1 tsp fennel seeds
3-4 cloves
1 inch ginger, chopped
2 medium onions, sliced
2 medium tomatoes, chopped
½ tsp red chilli powder
¼ tsp turmeric powder
½ tsp cumin powder
Salt to taste
2 tbsps fresh cream
Sprig of coriander for garnish

Method

1. Heat oil in a non-stick pan, add fennel seeds, let the colour change. Add cloves, ginger, and sauté for 30 seconds.
2. Add onions and sauté till golden brown. Add tomatoes and mix well. Cover and cook till tomatoes are pulpy.
3. Add red chilli powder, turmeric powder, cumin powder, and mix well. Add salt and mix well. Cook for 30 seconds and take it off the heat and set aside to cool slightly.
4. Add the cooled mixture into a blender jar and blend to a fine paste. Set aside.
5. Heat a non-stick pan, add the prepared paste, almond paste and mix well. Cook for 1-2 minutes.
6. Add fresh cream and mix well. Add paneer pieces and gently mix. Adjust seasoning and mix well. Take it off the heat.
7. Garnish with sprig of coriander and serve hot.
