Sim Ki Phali Ka Achaar:

Ingredients:
French beans 1 kg
Turmeric powder ½ tsp
Mustard oil ½ cup
Salt 2 tbsp
Fennel 2 tbsp
Fenugreek seeds 1 tbsp
Fennel seeds 2 tbsp
Red chilies (whole, cooked and crushed) 15 pieces

Method:
Heat oil in a pan add French beans and fry for about 2 minutes. Then add all the remaining ingredients and cook for about 2 more minutes. Cool and put into a sterilized jar.

Masala Khichdi:

Ingredients:
Rice (soaked in water) 2 cups
Oil 1/4 cup
Salt 1 ½ tsp
Fried onion 1 cup
Green chilies (sliced) 2
Fresh coriander 3 tbsp
Red lentil 1 cup
Split mung beans ½ cup
Whole garam masala 3 tbsp
Turmeric powder 1 tsp
Red chili powder 1 tsp
Coriander powder 1 tsp
Cumin 2 tbsp
Ginger 1 tbsp
Garlic 1 tbsp
Onions (sliced) 2 large
Eggs (boiled) ½ dozen
Chicken Stock 1 liter

Method:
Heat oil in a pan add onion and fry well. Set aside. Then add garlic and ginger, fry for a minute. Now add both lentils, whole garam masala, chicken stock, turmeric powder, red chili powder, cumin and salt along with 1 ½ liter of water. Bring it to boil and cook until the lentils are tender. Then add rice and green chilies. Cook until the rice becomes soft. Now place it in a serving dish, sprinkle fried onions on top. Then cut the eggs into wedges and place it on the khichdi. Serve hot.

Aalu Sabzi:

Ingredients:
Potatoes (cubed) 1 kg
Oil 6 tbsp
Ginger 1 tbsp
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tbsp
Green chilies (sliced) 3
Fresh coriander (chopped) 6 tbsp

For Achaar Masala:
Fennel ½ tsp
Fennel seeds 1 tsp
Fenugreek a pinch
Carom 1/3 tsp
Cumin 1 tsp

Method:
Heat oil in a pan add ginger, red chili powder, coriander powder, turmeric powder and potatoes. Fry well for a minute. Then add achaar masala, salt and 3 cups of water. Bring it to boil. Cover and cook on medium heat for about 20 minutes. Then add fresh coriander and green chilies. Serve hot.
