Black eyed peas cooked in spicy tangy masala.
SPICY LOBIA
Ingredients
1 cup black eyed peas (lobia)
¼ tsp turmeric powder
2 tsps coriander seeds
1 tsp cumin seeds
5-6 dried red chillies
¼ cup scraped fresh coconut
1 tbsp oil
1 medium onion, roughly chopped
3 green chillies
2 tsps finely chopped garlic
1 tsp sugar
1 tsp tamarind paste
Method
1. Heat sufficient water in a deep non-stick pan. Add black eyed peas and turmeric powder, mix well and boil.
2. Dry roast coriander seeds and cumin seeds till fragrant. Remove from heat and cool.
3. Grind together dry roasted spices alongwith red chillies and coconut into a smooth paste.
4. Heat oil in a non-stick pan. Add onion and saute well.
5. Slit green chillies into halves lengthwise and add to the pan alongwith garlic and saute for 2 minutes.
6. Add ground paste, mix well and sauté for 2 minutes. Add boiled black eyed peas alongwith the stock and stir to mix.
7. Add sugar and tamarind paste and mix well. Simmer for 3-4 minutes.
8. Serve hot.
