Burgers with Coleslaw :
Ingredients For The Burgers:
Lean minced beef 500 gm
Fresh white breadcrumbs 50 gm
Onion (chopped) 1
Parsley (chopped) 3 tbsp
Dijon mustard 2 tsp
Sun-dried tomato paste 1 tbsp
Egg yolk 1
Oil 2 tbsp (for frying)
Salt and ground black pepper to taste
For The Slaw:
Mayonnaise 4 tbsp
Dijon mustard 2 tsp
Hot sauce 1 tbsp
Lemon juice 1 tbsp
Sugar 1 tsp
Carrot (coarsely grated) 1
Raw beetroot (peeled, coarsely grated) 1/2
Celery (chopped) 2 sticks
Spring onions (chopped) 2
Parsley (chopped) 3 tbsp
To Serve:
Burger buns 4
Lettuce (shredded) 1
Tomato (sliced) 1
Cucumber (sliced) 1
Method:
First make the slaw. Mix the mayonnaise, mustard and hot sauce in a bowl, add the lemon juice and sugar, season and stir to combine. Dip in the carrot, beetroot, celery, spring onions and parsley, stir until coated in the sauce. Season to taste and add more lemon juice if required. Set aside to chill. To make the burgers, place all the ingredients (except the oil) in a large bowl, season and mix with your hands until combined. Shape into patties. Chill in the fridge until needed. Heat the oil, then fry the patties for 3-4 minutes on each side until browned and just cooked through. Meanwhile, slice the buns in half and toast. Put some lettuce, sliced tomatoes, patty and cucumber slices. Add any sauces or chutney of your choice, the place the other half of each bun on top and serve with slaw on the side.
Burgers Buns:
Ingredients:
Lukewarm water ¾ – 1 cup
Butter 2 tbsp
Egg 1
Flour 3 ½ cups
Sugar 1/4 cup
Salt 1 ¼ tsp
Instant yeast 1 tbsp
For Topping:
Melted butter 3 tbsp
Sesame seeds to sprinkle
Method:
Mix and knead all of the dough ingredients by hand, or using a mixer to make a soft and smooth dough. Cover the dough and let it rise for 1-2 hours, or until its nearly doubled in bulk. Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round ball. Place the buns on a lightly greased baking sheet, cover and let rise for about an hour, until slightly risen. Brush with half the melted butter and sprinkle sesame seeds. Bake in an oven at 200 degrees C for 10-15 minutes and once done, brush the buns with the rest of the melted butter.
