Yakhni Pulao:
Ingredients:
Mutton 1 kg
Onion 2 sliced
Ginger Julienne 1 tbsp
Black peppercorns 20
Cloves 10
Cinnamon 2 inch pieces
Black cardamoms 2
Small cardamoms 2
Garlic 1 pod
Salt 1 tsp
Anise seeds 3 tbsp
Coriander whole 4 tbsp

Other Ingredients:
Oil ¾ cup
Rice (soaked) 750 gm
Black cardamoms 2
Cinnamon 1 inch stick
Cloves 6
Black peppercorns 6
Ginger garlic 1 tbsp heaped
Chili powder 1 tsp
Green chili ground 1 tbsp
Brown onion ¾ cup
Salt 1 ½ tsp
Yogurt 1 cup
Method:
Make a spice bag with Onion, Ginger, Black peppercorns, Cloves, Cinnamon, Black cardamoms, Small cardamom, Garlic, Salt, Anise seeds, Coriander whole, add in a pan with mutton and 8 cups of water, cook till mutton nearly done and 4 cups stock left. Heat oil add whole spices, ginger garlic paste, fry well by adding little water, then add all the seasonings with brown onion and yogurt, fry well, add boiled mutton, cover and cook for 10 minutes, then add left over stock, when stock boiling add soaked rice, cook on medium flame for 10 minutes then lower heat, cook for 15 minutes till done.

Punjabi Mutton Curry:
Ingredients:
Mutton 500 gm
Coriander powder 2 tbsp
Onions 4
Garlic paste 2 tsp
Cloves 4
Green cardamoms 5
Cinnamon stick 1
Salt to taste
Clarified butter 4 tbsp
Yoghurt 2 cups
Ginger paste 2 tsp
Redchili powder 2 tsp
Tomatoes 3
Peppercorns 8
All spice powder 1 tsp
Turmeric powder 1/2 tsp
Coriander leaves to garnish

Method:
Melt clarified butter. Add cardamoms, cloves, black peppercorns, cinnamon stick. Sauté and add the sliced onions along with salt in it. Sauté till the onion turns light brown in color. Next, add ginger and garlic paste and cook the mixture until the raw smell disappears. Now, add turmeric powder, red chili powder and coriander powder, tomatoes and cook till the tomatoes are pulpy and cook until the oil separates from the masala. Add mutton, yoghurt and some water. Add chopped coriander leaves along with all spice powder just before serving.
