If you are bored of your usual ice-creams, you can try this exclusive Turmeric Ice-cream made with the goodness of turmeric, absolutely delicious.

TURMERIC ICE CREAM

Ingredients

1 tsp Tata Sampann Turmeric Powder
1 cup milk
2 cups fresh cream
¾ cup condensed milk
1 cup milk powder
2 tsps homemade milk masala mix (elaichi, black peppercorns, cloves, fennel seeds and cinnamon)
½ cup castor sugar
12-15 almonds, blanched and peeled
10-12 pistachios, blanched and peeled
12-15 cashew nuts, blanched
Icing sugar for garnish
Dried cranberries for garnish
Pistachio powder for garnish

Method

1. In a non-stick deep pan, add milk, fresh cream, condensed milk, milk powder, and mix till smooth and lump free mixture is formed. Place the pan on heat.
2. Add milk masala, and mix well. Allow the mixture to come to a boil, lower the heat and let the mixture reduce slightly.
3. Add Tata Sampann Turmeric Powder and mix well. Cook on low heat for 4-5 minutes, mixing constantly.
4. Add sugar and mix well. Cook till the sugar dissolves completely. Switch the heat off.
5. In a blender jar, add almonds, pistachios, cashew nuts and a little of the prepared milk mixture. Blend to a fine paste and add it to the remaining milk mixture. Mix well.
6. Strain the mixture into a bowl and refrigerate for 1 hour.
7. Add the ice cream mixture into the cold ice cream churner bucket. Place it on the churner and start the machine. Let it churn for 20 minutes.
8. Transfer the mixture into an air tight container and freeze it for 4-5 hours.
9. For serving, dust icing sugar on the serving plate, scoop out the ice cream into a waffle bowl and sprinkle some dried cranberries, pistachio powder and garnish with mint sprig.
10. Serve immediately.
