Torrai Fry:
Ingredients:
Ridge Gourd ½ kg
Ginger 1 tbsp
Garlic 1 tbsp
Green chilies (sliced) 6-8
Oil ¼ cup
Onion (sliced) 1 medium
Mustard seeds 1 tbsp
Yogurt 1 cup
Salt 1 tsp
Method:
Heat oil in a pan add onion and fry till light brown. Then add ginger and garlic. Fry for a minute. Now add mustard seeds and ridge gourd. Then add salt and green chilies. Cook for about 5 minutes. Now add yogurt and cook on a high flame for another 15 minutes. Serve hot.
Homemade Tomato Ketchup:
Ingredients:
Onion (sliced) 1 large
Garlic 5 cloves
Tomatoes (chopped) ½ kg
Tomato paste 4 tbsp
Salt 1 tsp
Sugar 1 ½ cup
Vinegar 1 cup
Corn flour 3 tbsp
Oil 4 tbsp
Red chilies (whole) 5
Cloves 2 pieces
Black pepper 1 tsp
Bay leaf 2
Method:
In pot heat oil add onion, garlic, tomatoes, tomato paste, salt, sugar, vinegar, whole red chilies, cloves, black pepper and bay leaf along with 1 liter water. Cook well for about 10 minutes. Then dissolve corn flour with water and add to the mixture. Mix well. Now blend well with hand blender. Serve.
Chicken Fajita Melt:
Ingredients:
Chicken breast (boneless) 400 gm
Capsicum (sliced) 2 large
Tomatoes (sliced) 2 large
Onion (sliced) 1 large
Mushrooms (sliced) 4-6
Red chili flakes 1 ½ tbsp
Salt 2 tsp
Garlic (chopped) 2 tbsp
Oregano 1 tsp
Cumin 1 tbsp
Cheddar cheese 1 cup
Mozzarella cheese 1 cup
Lemon juice 1 tbsp
Oil 8 tbsp
Chapattis 6
Method:
In a bowl marinate chicken with red chili flakes, lemon juice, oregano and cumin for about 1 hour. Then heat oil and cook the chicken for about 10 minutes on a medium heat. Now add all the vegetables and salt. Cook well for about 5 minutes. Then add cheddar cheese and mozzarella cheese. Cover and cook for 2 minutes. Now add the equal quantity of the mixture in the chapptis and roll. Serve hot.
