Simple, sweet, spicy, soul-satisfying Stir fried Chicken is what you need to liven your meal!
STIR FRIED CHICKEN
Ingredients
300 grams boneless chicken breasts
250 grams broccoli
10-12 button mushrooms
2 spring onion greens
Salt to taste
1 tbsp blended sesame oil
1 tbsp chopped garlic
1½ tbsps oyster sauce
½ tsp green chilli sauce
A dash of dark soy sauce
Method
1. Cut broccoli into medium sized florets and set aside. Cut the mushrooms in halve and set aside.
2. Chop spring onions greens and set aside. Cut chicken into 1 inch cubes and set aside.
3. Bring sufficient water to a boil in a deep pan, add salt and add broccoli and blanche for 2 minutes and drain into ice cold water.
4. Heat oil in a non-stick wok, add garlic and mix well. Add the chicken and sauté on high heat for a minute.
5. Add mushrooms and sauté well. Add salt and mix well, cook for 4-5 minutes on high heat, sautéing occasionally.
6. Add oyster sauce, green chilli sauce and dark soy sauce and mix well. Cook for 1 minute. Add broccoli and sauté for 2 minutes. Add ½ of the chopped spring onion greens and mix well. Take the pan off the heat.
7. Transfer into a serving bowl, garnish with remaining chopped spring onion greens and serve hot.
